Definitely giving it a good clean and wax should be nice but aside from that I would leave it as it is. It’s gorgeous. I just barely missed an opportunity to by the very same model in black a few weeks ago and am very bummed I missed out.
I'd get the worst of the rust off, (or all of it), retouch the black paint with automotive paint, T Cut it, then give it a generous going over with Autoglym Resin and finish it off with a ceramic spray. Good luck!
You said you wanted it as a pop to the shops bike, so leave as is as far as possible - throughout the rebuild. That way you will have more time to take the dog for a walk! 🙂

Leave as is, but spray the inside of the frame tubes with some rust protection.

Tcut with foam pad on a cordless drill then clear lacquer if required 👍

Out of curiosity what metal is that frame made of? Further, never heard of Ibis, what's the country of origin? :)
The Kona is a steel framed bike. The Ibis is a californian brand that started in 1981
Respray it and don't re-sticker it. Konas are attractive to thieves, so make it anonymous.
And put a rack on it. Super-useful 👍
I would leave it as is. It's only original once and I like the patina.
