    Hi Linda, making salsa with your garden tomatoes and jalapeño peppers sounds great. Yes we make salsa Italian, but bigger pieces of tomato like a topping for bruschetta. It’s delicious. .     salsa is my favorite thing to can Linda. I miss Texas so much and tasting good homemade salsa takes me back there. I recently started roasting all my salsa ingredients in the oven, except the spices and cilantro. what a difference roasting makes.

    I love salsa and want to start canning it. New to canning. But was wondering can I put bellpeppers and some hotter peppers in like mix them up. Half jalapeños and half Serrano or Fresno or habanero

    Save and dehydrate your tomatoe skin and grind into tomato powder for soups, stews, tomato flavor, etc

      I have done that in the past but I have plenty of tomato powder on hand

    Can you substitute the jalapeño for a higher heat variety and it not compromise the canning process? I’m newish to canning and not sure if the capsaicin of a hotter pepper would do anything to the seal.

    Those are pretty jars! What kind are they? It looks like it has lattice design on it. I think it was your pint jars.

      Those are jars I have had for years and I live them. They are better homes and garden😁

    Hi Linda, the salsa looks great all that cilantro yum. I wanted to ask you a question. My daughter qas looking into getting one of the large FrigeSmart containers and she went on your websire and could only find the medium container. Are they sold out of the large? Enjoy your lovely salsa looks delicious.

      @@LindasPantry AWESOME!!! now to find some. Thinking of future in case Ball lids are few and far between.
      I have been using non canning jars for my dehydrated powders. That way I have a few smaller jars for canning.
      My grandmother used melted wax to seal her jams n jellies. Loved chewing on the flavored wax as a young kid.

    Linda, I am hoping you can help me. I powdered tomatoes and want to use some to make pasta noodles. I was thinking of adding 3 Tb. Of powder to the eggs. Do you think the amount of tomato powder is enough? I also want to use some mixed veggie powder in the next batch. Insights please. Thank you.

      I think that would be the perfect amount but all you can do is tested out and see if you get the right flavour or not

      Not sure which ones are talking about but if it's the fatter pint jars that has the decorations on him I got those years ago Walmart bills are better homes and garden jars

    You shouldn't trash those tomato peels - dehydrate them and make tomato powder!
