You have made my day. I took a long trip down memory lane. When I was little mom made these for after church during the spring and summer. I haven't had one in over 40 years BUT that's all changing. Tomorrow my granddaughter and I are making one for Sunday dinner. Thanks for the memories.
Gosh haven't seen that in DECADES! My mother used to make a version of this using RED jello and "REAL CAKE" batter (no cake mix, pudding mix or dream whip mix) because my father's favourite dessert was always cherry. She would put either my sister or me up to the cooled cake to poke the holes. We thought we were big-shot "helpers" and could barely contain ourselves until it was served out on every diner's plate! Her icing consisted of a second box of cherry jello mixed into a container of whipping cream and beaten into peaks, spread on the cake, put back into the fridge until set then cut and served . Haven't even thought of it in years.

Looks so yummy!! I made a Strawberry Poke Cake with a vanilla cake covered with sweetened condensed milk and a fresh strawberry sauce!! Then topped with cream cheese whipped cream!!
I didn't realize they still made Dream Whip but I have never looked for it either. I'll have to look next time shopping just for the heck of it. Theat was my grandmother's always go to.

Don't know about you but I love Pyrex jugs for measuring and mixing but they have CRAP pouring spouts, you'd think after so many hundreds of years (might be a teeny-tiny exaggeration) lol. They'd have sorted it out!! Your cake would work great with a white cake mix & Strawberry Jelly (Canada Day & you both love Strawberry), or Strawberry & Blue/BlackBerry (4th July?) I've always found the idea of a "Poke Cake" worrying. Does it stay cake-like with pockets of Jelly or does it become a sort of homogenous soft 'wet' texture? It's very pretty. I wonder if 7Up would work as the liquid? Hmm, so many options, no chance at all of buying "Pudding" mix over here. Lol.
@@OurHalfAcreHomestead Do you mean "the extra soda ...." as in the 7Up (do you call it "Soda" like your US neighbours) or do you mean additional Bicarbonate of Soda would be a good addition. I thought your cake rose very well without additional raising agents other than your extra egg for the 'Pudding'

I have made this with orange jello and vanilla pudding and it tastes like a creamsicle...so yummy!

7 up WOULD work..and the extra soda helps LIFT the cake!
