Tip from an Asian: If you want fried rice but only have freshly cooked/warm rice, just throw the rice into the fridge as you prep your veggies and proteins. Better to use cold/cooled down rice cause warm rice gets super mushy
Besides measuring cup of water for rice, you can use the lines on your fingers so if you do a cup or so of rice the water should hit the first line of your finger. If you add more rice then it should hit the second line of your finger. Another way is putting water until you can’t see the rice. If you use either of three methods you will eventually just look and cook. More water makes it wet and mushy less water makes it dried out and burn easily. I know how to make lumpia which the meat is raw and cooked in the oil but that’s a small amount. I believe Chinese version is cooked shrimp and then wrapped in cabbage, carrots and whatever else.
