    As a child growing up all i look forward to in my father mettem was his duff, Eddo and plantain...how a use to proper thief his duff, now that am grown, even is simple soup I make duff and drop it in and it come out so fluffy and nice and my son loves it ...i make mines just like you only not in plain water , keep up the good work man, your receipt are amazing

    Thanks for sharing. Ok y'all. My duf was so tuff. I used baking soda instead and used the water from the boil up. As I was mixing the ingredients I felt like the dough was going to be tuff. Will try again. As an American this was my first time working with a recipe like this. I will try again.

      Always a first time you will get it eventually. You should use baking powder, the boiling in the boil up is ok as long as long as you don't boil it for more than 5 mins or that causes them to become hard too.

      You can use the whole wheat flour but you’d have to mix it down with the regular flour or it may come out a bit tuff.

      My mother always used cornmeal flour with it which I preferred. She never made it with only plain flour.

    This reminded me of my mom's dumplings so I had to try them and perfect dumplings man. I had them with callaloo and pig tail. Just scrumptious, next I will try the fried version but I was too hungry today so next time.

      Thank you, we have never tried yeast in this duff before but it should be ok.
      The important thing is not to boil it for too long, 5 - 6 mins tops.

      It will be ( 2 cups flour, 3/4 tbsp. sugar, 3/4 tbsp. baking powder and 1/4 tsp. salt or you can use half of all the ingredients.

    Changing the temperature and pressure of the pot can cause your duff to fall. Be careful with these guys. Once it floats and you verify it is cooked, remove it immediately. Having your pot opened too long causes the duff to fall. Let it steam, set your timer, and take it out after you verify that it's cooked. 💗❤️

      No it has to be boiled first, the boiling cooks it. The frying is just a light frying to get the crispiness.

      Hi , sorry to hear that, it is usually 2 things together or separately that would cause this
      1. Not enough baking powder.( will not be fluffy)
      2. Boiling for too long ( no more than 5 mins of boiling is needed) or else it will become rubbery).

    Duff is usually made for Methem, not soup. There is a difference between Methem and Soup. In your regular soup you would use dumplings, which dont really raise. No point just doing it by itself. Might as well kill 2 birds with one stone, cook once and eat fu 3 days.
