As a child growing up all i look forward to in my father mettem was his duff, Eddo and plantain...how a use to proper thief his duff, now that am grown, even is simple soup I make duff and drop it in and it come out so fluffy and nice and my son loves it ...i make mines just like you only not in plain water , keep up the good work man, your receipt are amazing

Always a first time you will get it eventually. You should use baking powder, the boiling in the boil up is ok as long as long as you don't boil it for more than 5 mins or that causes them to become hard too.

Changing the temperature and pressure of the pot can cause your duff to fall. Be careful with these guys. Once it floats and you verify it is cooked, remove it immediately. Having your pot opened too long causes the duff to fall. Let it steam, set your timer, and take it out after you verify that it's cooked. 💗❤️

Duff is usually made for Methem, not soup. There is a difference between Methem and Soup. In your regular soup you would use dumplings, which dont really raise. No point just doing it by itself. Might as well kill 2 birds with one stone, cook once and eat fu 3 days.

You can use the whole wheat flour but you’d have to mix it down with the regular flour or it may come out a bit tuff.
My mother always used cornmeal flour with it which I preferred. She never made it with only plain flour.
