No, we cannot respect people's "mindset". We all have to respect empirical FACT. Brute force denial of plainly obvious facts is one of the most ridiculous and dangerous things religion has advocated, and that's saying something. Creationists are happy to support science when it proves what they already believe, but the overwhelming evidence for evolution and this planet's dynamically changing history means so little to them that instead of trying to refute it, they simply pretend the evidence doesn't exist.
We can also blame Jurassic Park on what we had thought Velociraptor looked like, when in reality they were as big as a turkey
