I have one question though, when I click on the linear gradient, it gives me only two colors to play with. AE doesnt offer me to edit a third one. Is it because of the version I am using or am I missing something??

You can add more than one colors to linear gradient. You just have to click in between. Hope this helps

You just have to adjust the bevel setting as well
