    Cost of the ham: $30 for 10 lbs
    Total batch time: 30 hours 17 minutes
    Weight before drying: 10 lbs, Weight after drying: 1400 grams (about 3 lbs)

    Start by asking yourself this question. Why are you freeze drying food? Knowing this should help you decide what you should freeze dry first.
    I'm freeze drying because:
    Just to freeze dry leftovers?
    You want to make your own food for camping/backpacking?
    For if/when the SHTF?
    For a short term emergency?
    You have your own garden and want to freeze dry the food?
    You love Costco but don't have a family of 6?
    You are good at finding the food sales but only have 1 freezer?
    When you cook homemade chili just for yourself you make 10 gallons? Because you have 3 full freezers and are worried about power outages?
    If I knew then what I know, I would have freeze dried things in a different order. I started freeze drying because we had 3 full freezers and was thinking of getting another one. I decided I should buy a walk-in freezer instead. I started looking into walk-ins and realized they were expensive to buy (even used ones) AND expensive to own and operate. Then I found out Harvest Right was making home sized freeze dryers. One of my first thoughts was "I like Mountain House!" I have used their food for backpacking almost 45 years and we even kept some in our travel trailer, for just in case.
    This list is about getting started on a 500 lb mixed pantry of freeze dried foods in 100 days.
    (This may be a bit optimistic and perhaps it'll only be 400 lbs)
    Goal of about 85 lbs per category. (100 lbs per category if we don't do the Meals/Dishes)

    Freeze dried food will stay fresh for many years and be ready and waiting when you need it.
    We do videos showing how we are using our Harvest Right Freeze Dryer to freeze dry food for long term storage. (We have the medium size machine that we got in August of 2017) We talk about how to load and unload the freeze dryer, how to know if the food is dry, is it better to freeze dry raw food or cooked food, and do a few taste tests.     Hey Dan, thought I'd share what happened to us last night. I don't know anyone IRL that has a FD'er, but I know you can appreciate the magnitude of this news. Last night my husband and I awoke to the most horrible smell. Fearing a fire, my hubby investigated and found that our FD, which had been running and was in dry time, had apparently had a fire *inside* the drum and the smell was the charred food, a mixture of fruits and veggies. How it happened is not clear though I can tell you the heat pad on the bottom shelf was more burnt than the rest and looks like it was either the cause or just where the worst of the heat was. The smell is my house is awful and its been depressing to dispose of the charcoal that was once food. What is worse is having a freezer full of prepped foods awaiting their turn in a machine that is not operational. The door cracked from the heat and has a circular burn for the space inside the rubber ring. Hubby emailed HR today but with the holiday it will be several days before we hear anything. I've been checking all the FD Facebook groups I follow and the few other incidents I can find seem to be related to the shelf connection or the wiring. If you remember, we had recently disinfected the machine after brooding chickens elsewhere in the basement, but we ran a couple loads since then without issues. This was the first load run with the newest version of the software, which is suspicious but I'm trying not to jump to conclusions. The run gave me issues from the start... everything looked fine and I expected it to take forever because cherries were 1 tray of the run. We recently added a device that texts you when the pump turns on and off so you can monitor the run's progress without having to tromp downstairs to peek. I wasn't concerned when it was taking longer but at some point going to the basement for other reasons I heard the machine making a beeping sound I didn't recognize. We've never had vacuum issues, but this time I did. I open and reclosed the valve and hit continue an it seemingly fixed the problem as it progressed with the run. At 9pm last night I checked again, just to be sure and it was 1/4 of the way into its final dry and advancing. I have no idea what happened between 9pm and 3am, but I'm looking at major repairs, if not a full replacement. I am SO thankful the motor never caught on fire or the insulation around the drum. It all stay contained, except the terrible smell of burnt cherries, bananas, apples, mushrooms, and green beans. I don't know that I'll ever be able to sleep or leave the house with a FD'er running again. I'm eager to hear what HR has to say. Hubby said he was surprised the pump was still running as he thought when the door cracked it would have stopped. The machine boots up and the software runs, and I think hubby said the drum cools when he put it through the testing cycle. Hoping HR can pinpoint the cause and give us some peace of mind for either repairing or replacing the machine. I know the chances of it happening again are slim, but would you be able to rest easy after this? Had to share this with someone, and I don't want to put anything out on the FB groups until I hear from HR. I'm just sick to my stomach about this. It was only about $75 in food (damn cherries aren't cheap and it was about 6lbs before pitting and quartering) but all the prep time, and the loss of use while I'm trying to clear out my freezers. And the machine is only a year and a half old. *sigh* Oh, and I know you will ask... hubby check the logs and it says it never went above 140°... not sure if that is because the sensor only registers up to 140° or what. He said nothing in the logs jumped out at him but he's not used to looking at them either. Sent the log with photos in the email to HR and lost the entire day to trying to banish the stink from my home. 😢

      Yikes! And just when you were getting back in the game.
      I'll have to take more time in the morning to read this more closely, (way past my bedtime and I still need to weigh some trays) but I suspect you may be right to think it was the bottom tray heater. It would most likely be an arcing electrical situation as opposed to open flames, due to the lack of air. (Not that that would be much comfort) On mine, the heat sensor is not on that shelf, so it wouldn't even know it was overheating the bottom shelf. But still, you shouldn't get a runaway heater pad.
      The heater is under the shelf and covered with with an insulating plastic layer, right?

      @@SchoolReports I don't remember which of our shelves the heat sensor is on... I'm thinking its the top but I could be wrong and the shelf unit is outside because it stinks so bad. I'll have to check tomorrow. The heater on the bottom shelf is far more melted than the others and it separated from the metal. The tray above that was the most burnt, both the inside of the tray and the sides and bottom. I don't mind sending you the pictures, but at this time I am not putting anything out to the public as I'm waiting to see how HR handles this. And I want to know the cause before we put out an all points bulletin only to then find out it was something we did that caused the issue. I believe we ran the load just like every other load we've ever done... but new software, first time ever getting a vacuum error message, and all the time it was unattended during that vacuum error... who knows? 🤷‍♀️

I just couldn’t figure it out, I ordered your recommended scooper, got it, and,,,it never fit! My son has a 3D printer and I will be asking him “pretty please “ to amend a scooper for me.       You are welcome, and sorry for the confusion caused by the lack of information on my part. I would just grab and use the scoop without thinking about the fact that I had altered it. I alter almost everything I own as I don't really think about it.

    I love your channel. I have a quick question. Can I take meat out of my freezer, thaw it, cut it, refreeze it, then put in the freeze dryer... for instance pork loin or a roast or a ham..

      @@bettybrackee4926 I think a lot of that might have been about the texture of the meat changing. As long as it is thawed safely in the fridge.

    Hey, love your channel! I just really wish I could get a narrow, med freeze dryer scoop to fit the medium trays long ways. I bought (4) and they ALL were too wide. How/where can I get a scoop that fits my trays? Lol, I’m tired of buying and returning them,,,,

      Have you ever used something long enough that you no longer give it a second thought? Well, I need to remember to mention that the scoop I use is one I "adjusted."
      I bought a scoop off Amazon and then cut both sides off and attached 3D printed end pieces to the sides. This is how I changed the scoop - Food Scoop For Freeze Dryer Tray ua-cam.com/video/trs26E42Zho/v-deo.html
      It could be done without a 3D printer by heating up the cut off pieces with a heat gun (could be done over a toaster or in an oven) and I was able to easily flatten them. It would then be very easy to sand them to fit the side of the scoop and glue them on.

    Hi, I love your attention to detail, however it cracks my wife up as she says "this guy is just like you" hahaha In her eyes we are "Pedantic Petes" and a pain in the proverbial butt! Thats her problem :) Cant wait until you convert 100% to Kilograms and grams and Celcius without the hybrid weight and temp system you currently use. Keep up the great work from Perth western Australia.

      Ha! I thought about calling the series "Freeze drying 225 kilograms in 100 days."
      Funny thing is, it's been a long time since I cared which scale I'm working in, because the numbers are on the (insert appropriate tool here - scale, ruler, thermometer, calipers) I measure it, read the numbers off the tool, and I'm good! I tell people that I wouldn't care if it were just a knotted string, as long as the knots are evenly spaced!
      Except Celsius. I don't care for that one because the the scale is too coarse. Now if we made a new scale where instead of 0 to 100 for water freezing to boiling, we make it 0 to 100 is water freezing to body temp, I'm in.🤣 When I'm 3D printing (and when I was teaching it) it is only grams and millimeters.

    What temperature is the food when done freeze drying?

      If taken out before the tray heaters turn off, it should be about the same as whatever temperature the heaters are set at. On our machine we have it set for 120f, so the food should make it up to 120f. Ours is usually at that temp for hours at the end of the final dry cycle.
