I know the grades of the routes seem very important, like an actual indicator of how you're progressing (like pace in running or weight in lifting), and it's totally fine to keep track of them. But! Years of climbing taught me that you shouldn't worry too much about them. When I went lead climbing in a crag I could climb certain grades, went to another country, they were using the same grading system, and I was one whole grade below my usual. I was like "what's happening?!" but the thing is, grading is sooo subjective. I also had that with different bouldering gyms. I climbed in gyms in many different countries in Europe and I always had different experiences, depending on who was setting the routes. Some route-setters like to make it all about power and dynamic moves, some people make it easier for very flexible climbers, some people are "old school" and other people try to be creative and put you in funny situations like going upside down or balancing on a teeny-tiny ledge without hands. What is important is to develop your own strategy, because you know your strengths and weaknesses, and you're unique like that. That's what I love about climbing, it's not just a workout, you need to use your brain too. Have fun! (:
