Lemon and Coconut Yoghurt Tarte
Makes: 1 cake
Ingredients - Base
200 grams desiccated coconut
75 grams rasperry jam
Ingredients - Topping
5 leaves gelatine
500 grams natural yoghurt
200 grams caster sugar
Zest and juice of two lemons
250 grams coconut milk or passion fruit
2 tablespoons vanilla essence
toasted Desiccated coconut to top the cake
Chocolate Tofu Cheesecake
Ingredients
300gm silken tofu at room temperature
4 tablespoons of raspberry jam
350 gm of bitter chocolate (70 percent cacao or more)
2 tablespoons of Cointreau
150 gm of cookies or dry digestives or desiccated coconut
Cocoa powder, to dust
Strawberry and coconut cake
Crust
▪ 4 dates
▪ 1 1/2 cups dried unsweetened coconut
▪ 1/4 cup cacao powder
▪ 1 tablespoon raw honey
▪ 1 tablespoon coconut oil, softened
1. Place all ingredients in food processor and pulse until well combined.
2. Pat firmly into 7-inch cake ring.
Filling
▪ Flesh from 3 young Thai coconut
▪ 1/3 cup coconut water
▪ 1 cup coconut oil
▪ 1/4 cup raw honey
▪ Little vanilla
▪ 3 cups strawberries
▪ cacao to dust

Opening the coconut…it really is the best way to open it!

The coconut and strawberry cake looks absolutely stunning! I'm impressed by the simplicity of the ingredients and can't wait to give it a try. I'm also intrigued by the tofu cheesecake recipes - could you tell me more about the texture? Is it creamy and cheesecake-like or lighter and puddinglike?
Hey Juan, the tofu cake is dense like a cheesecake and it’s my wife’s favorite. Try it and if you want it creamier double the liquid ( Cointreau, cognac or oranges juice ) in the recipe sorry about the bad sound

Ok im thinking your wireless Microphone wasn't turned on. So we had the audio from the Microphone on the camera. These looked great. I think I'll have to do one of these for Thanksgiving. I had a fun idea on the yogurt with berries on top cake. Blend enough blueberries into the yogurt to give it a nice blue color and some blueberrie flavor also. Have a great day 🌤.

Lol, Perhaps the most dangerous knife work ever put on video. Everyone at home…please do not try opening a coconut with a knife like Walter if you want to stay out of the hospital! He’s a pro you’re not. Big fan of the channel

Doug I have seen much worse in professional kitchens 🤦🏼♀️ good chefs are animals and the most dangerous thing in a kitchen is a blunt knife 🤣🤣🤣
