You don't have to. We end up making several versions of an itinerary by making assumptions on the dates and times we want to do certain activities and inserting them accordingly. The whole point is to help you visualize how your time is being spent, and whether or not you've given yourself enough time on certain days. It helps us not over-plan our trips. As we continue inserting more data, we find that we have to move activities to a later time, date, or cancel them all-together in favor of something else. It's all part of the process.
