@@Modernist_Pantryhi can i use pottasium sorbate and sodium benzoate to gether in chilies
Can't reveal what my food product idea is but you guys have no idea how useful this video idea was for me.
Glad it was helpful!
As a newbie to using potassium sorbate, I wanted to educate myself and this was the 1st video I jumped into . I am so glad because this video was absolutely brilliant and I think I got all my doubts answered . THANK YOU SO MUCH ! New sub here too 💯🔥
Welcome aboard!
Very helpful! Thank you!
You're welcome!
Thank you all for this video! I’m looking to create more natural products that I can market to my customers but the research is the first and most essential part. Extending the shelf life with a natural product was exactly my goal and you all will help me achieve it
You got this!
We do seem to be a world of chemicals. Thanks so much for the interesting videos! What you said about dough not rising well when potassium sorbate is added was a revelation to me!
Everything is chemical when you come down to it 🙂 It's just whether we give the chemical a catchy consumer friendly name
great its a big help in my product in mind❤
Glad it was helpful!
Amazing!
Thanks!
We have relatives of the rowan tree native here in the Northwest. They are in the genus Sorbus along with the rowan tree, but we tend to call all the trees, including the rowan tree mountain ash. They all have bright orange berries that are rather bitter and said to be toxic. Being a bit of a botanist, I figured sorbic acid is named after the genus Sorbus, which I confirmed on line.
Thanks for the insight! Neat to know
Ben is great, can’t wait to see the future he has in MP. If he could play around with ratios for ingredients and share those, that would be excellent!
That's definitely part of our plan!
Thanks for the info. I’ve been using it in a product I make and I’ve been using way to much.
Happy to help!
I notice when I use this in my baked goods it makes them more moist and for a longer period of time. I love this and the fact it is naturally derived.
Glad you like it!
Please how do you use the powder in cakes?
How long does it last ?
Pls dear help me in teaching me how to use it as u have used it and is OK I don't really understand all they said here pls how can I use it in drinks that I'm making like tigernut, soy milk etc.
Hi dear can i use pottasium sorbate and sodium benzoate to gether in my chilli souce also is it true to use the formula of 0.1 times weight of your food then add the numbar of that
Thank you for this helpful video. My question was what you touched on at the end, is there an average expected shelf life time extension ? I am excited to learn what you discover for yeast bread , too!
You may have answered this in a previous video, but I could use a review on storing spherification noodles longer term, too. 🍝😋
The answer is it depends! There's no add x = y more days exact type of formula available.
@@Modernist_Pantry oh, yes, I do understand that... just wondered if there was some kind of avg range. Thank you again!
Hi.Can potassium sorbate use to extend life for fried foods?Or how can we extend frie foods with caramel
Good day.
Such an insightful video, my question is that since the potassium sorbate doesn’t work well for yeasted bread. What other preservative can one then use?
Encapsulated Sorbic Acid is the way to go: modernistpantry.com/products/encapsulated-sorbic-acid.html
This stuff is great for preserving homemade gummies.
Agreed!
Good day your content is very helpful to us 😊, i have a question, for 1kg cheese spread i can direct put the potassium sorbate? or i need to disolve in water first before to mix in cheese spread? What is the ratio of water and the potassium sorbate for 1 kg cheese spread, please help me my grandmom love those cheese spread that i make the shelf live is to short 😊 thank you for answering my question 😊
Thank you so much for this video... I hope you get to respond toy question... Am into dates syrup production and apart from sterilizing containers and refrigerating my products, am hoping to try potassium sorbate as a better preservative to the ones above. What do you think?? Do you think it's a better method?? To what extent do you think it can extend the date syrup shelf life without altering the natural favor and benefits?...
That is a lot of R&D for a commercial product. We are not able to advise on this.
Good Morning, Miss G and Mr B. Gosh it is so nice to have a scientist in the house. We also learn about what nature offers us.
Our pleasure!
good day sir your content is really informative and helpful! may i ask does potasium sorbate does not need a certain ph in order to work? like other preservatives?
While it shows some activity up to pH 6 (about 6%), it is most active at pH 4.4 (70%). At pH 5.0 it is 37% active.
Hi..
Can i know how much preservative added to one kg chicken masala powder, mutton masala powder, moringa powder etc
What preservative..
Can I use this with my homemade fruit syrups? I usually make strawberry syrup/purée and I use them to make drinks in my cafe. The shelf life is killing me as it prevents me from making a big patch.
Btw thank you for sharing the information with us, you guys have helped me a lot.
You can certainly try it, it will help but if you're trying to figure out what the actual shelf life will be that will take some testing.
Can i put it in water with fruits?
hi there i want to make bird treats with agar agar and seeds and use potassium sorbate as a preservative (to make those seed bells for budgies). how do you calculate the amount needed for that. is the total weight the seed weight and agar agar dry before adding water? Im unsure how to calculate how much I would need to use of the preservative and how to calcluate the total weight of my mix? like in the muffin you had when you have different ingredients of different forms, do you take the final weigh of the batter?
We recommend using the total weight of the mix, but not sure how that's going to affect bird seed food, since we don't know much about birds.
This must be the answer i'm looking for i make bottled juice and my problem was the bloating on my bottles, maybe because it is caused by bacterias that builds on my bottled beverage, thank you so much! Also i didn't quite get how to calculate on using potassium sorbate can you please explain it thoroughly? Im new to using potassium sorbate
It's 0.1% -0.3% by weight of your liquid. I.e. 1000g x 0.001 = 1g.
I understand you said use an amount based on the total weight of your recipe. So the amount you put in the flour did you use that amount based on the weight of the flour or based on the amount of the recipe once the wet ingrdients are added? If so, is there a way to figure out the weight before making the entire recipe or can the sorbate be added to the mixture right before cooking? Asking for my cookies and brownies.
Amount of all the ingredients. You can figure out the weight by weighing out the individual ingredients.
Love the VDO. How much would I use in 1 gallon of coconut water and how will I know the new shelf life ?
usage ratio is typically 0.1%-0.3% by weight. Shelf Life testing is a complicated topic
Hi can i use it in meat like siomai?
In the manufacturing of sauces do you require both potassium sorbate AND sodium benzoate?
Sorry but we can't advise on how to make products retail-ready.
Hello can you use this in fresh brewed ice tea and how long will it keep if in the fridge
You can add it to iced tea. For actual shelf life you'll need shelf life testing.
True amazing
thanks!
Can I add the potassium sorbate dry to my herbs, like basil, and then make a pesto? Or should I weigh the pesto when done and then add in the potassium sorbate?
You can include it with the water in your blending process. Keep in mind that potassium sorbate does not preserve color.
What preservatives is recommended and can be used for mung bean paste. It only last less than 7 with half ratio of sugar. Definitely it would be much safer to eat if it's not containing toxic molds..
You'll have to test out different combinations to figure out what works. shelf life stabilization is a science and there's no single easy answer for these questions. You can add preservatives, lower pH, etc.
an it be used in patty mashed potato recipie with white eggs without milk to be fried in a pan or refrigirate for few days ?
This is a shelf life extender, it does not alter the texture or other properties of our recipes. It's also not a stabilizer if you're having trouble stabilizing your mashed potatoes. there are a lot of different potential stabilizers for this application. We recommend reviewing our extensive list of gums and starches and picking out a few to test

It is not a substitute for pasteurization.
Is it work in marinated chicken which I can keep in fridge for 1 or 2 weeks ? How much should I use for 1 kg of chicken

Hi! May I know if using this pottasium sorbate in my muffins recipe, then do I still need to add in Liquid Lecithin to extend the shelf life ??
potassium sorbate inhibits mold growth, liquid lecithin helps with maintaining the texture of the muffin. If you just add potassium sorbate your muffin will still go stale.

preservatives can only be added after fermentation otherwise you wouldn't get the yogurt at all. Try blending the potassium sorbate slurry into the yogurt after it's ready. This is just a general guideline, you'll have to actually test for efficacy and shelf life in a controlled environment.
