Cooking is fun, have to learn to enjoy left overs. A nice big pot of stew, lasts for days, gets better over time. Roast beef, pieces sliced off fresh and hot, the most tasty, lots and sandwiches after, same as roast pork, nothing like those fresh bits sliced off hot, before it is finally finished, you are full. Have a lot of fun cooking. Mix up a some sourdough and make huge flat wholemeal buns for great giant sandwiches. Savory French toast with baked beans, so much fun experimenting, it is satisfying to cook a good dinner, also satisfying to bung left overs into the microwave and heat them up ;D.
I think a burger is a good choice for your diet. A bun is better for your diabetes than 2 scoops of rice. I think you do a fantastic job of monitoring and maintaining your diabetes.
