Amazing - so two questions for you: (1) why such an emphasis on stainless steel for the baking sheet and smoking racks? (2) Is smoking this possible on something like a pellet grill?
Somewhere in my research I had learned to use stainless steel when resting bacon, sausage, etc in the fridge when raw etc. So I've stuck with that. I read so much when I first begin going down a path that I'm not sure where I picked that up; but it stuck in my head, thus I use stainless. As far as smoking on a pellet grill - 100%. I made the decision to get a new smoker just to hang my bacon vs laying on the grill grate. There are lots of folks out there using pellets grills for this very purpose, so you are good to go.
