Homemade Chicken Congee

- Congee aka Jok aka Rice Porridge, a nice sharing is caring kind of dish.
Ready in 1 hour. Cost: $4
Ingredients:
4 chicken thighs
Salt
White pepper
Sugar
Soy sauce
Sesame oil
Corn starch
Water
1 cup white rice (I'm using a rice measuring cup)
2 dried Chinese mushrooms (soak in water for 3+ hours)
2 sprigs scallions
Enjoy!

Looks delicious!. I love congee, I have it with a bit of clarified butter to give it flavour, fenugreek seed (methi), green chilli and then with curried chickpeas.
And it is great for when you are ill.

I think you did an awesome job! I ate this twice from a co worker who left. I just thought about how good it taste. Hers had some ginger in it and a whole boiled egg. Anyhow, I will try it your way and hopefully it comes out great. THX

im living on my own now so i just order this from chinese restaurants, i miss being with my parents now. Especially cause im sick and my mum would be banging out one of these bad boys as we speak if she was here. She does hers with chicken stock and less water.

Could I substitute Pearl Couscous for the rice? Also, what can I substitute for mushrooms, please?
Instead of mushroom, you can use sliced apples, and instead of chicken, you can use fish. But, then, it is an entirely different dish, isn't it?

Do you have to wash the rice?? The back of the package that I bought said not to wash it..
Yeah you're suppose to wash it until the water runs clear. That's usually about 4-5 rinses.
Not washing it also makes the water you're boiling turn into a starchy goo before the rice can finish

Yes but you will need to cook it longer to get the same consistency.

If your nearby store doesn't have Chinese mushrooms what are a good mushroom substitute?
I would try whatever dried mushroom you can find, they add more flavor. But using a button mushroom or skipping the mushrooms is ok too.
If I use button mushrooms I wouldn't need to soak it right? How long in comparison to the dried mushrooms in the video should I cook it for in the congee?

Yup that's correct no soak for fresh mushrooms. I would put them in the last 5-7 minutes :).
Also what kind of rice is best for this dish? Jasmine rice? :)

Jasmine rice should work nicely.
Are you Thai? Laotion? I ask because in the description, you also call it "jok".
“Jok” is also Congee in Cantonese.

Yes the chicken is cut small enough and I turned the heat back on so the congee is boiling. But to be sure you can boil it longer or take a piece out and check before eating :).

I despise the term "white people". I'd rather say, specificaly where the caucasians are from . So I read many times in the comments of white people(hahahahaa!!!) from N. America refer to congee as "gross" because of how it looks. I find them really retarded because they always reply "yes" to when I ask if they liked oatmeal, hot cereal or "oats/barley porridge"
