    As I know what other people have said it's a great video and a great explanation of what's going on but you're missing measurements And the name of Some of the ingredients like the different type of powders.

    What is the purpose of pasteurising the mixture if all ingredients are vegan?

      Vegan doesn't mean it's clean, it's necessary to have a product without bacteria, that's what pasteurizing is for. Based on thermal shock, microorganisms do not survive, raise the temperature and then lower it quickly, actually you can do it something similar by yourself in the shower and your immune system will rise to the maximum, you will no longer get sick. Start with hot water and then finish the bath with cold water.

      A mix of different types of fibers like long-chain inulin and a fibers syrup from an Italian company

    Great stuff. I struggle to recreate the vanilla gelato I had as a kid from the metal container the ice cream man served it from.
    Please advise how to create the perfect milky vanilla flavour....I never nail it. Ps do you use cream in italian gelato?

      Probably as a kid you there was no vanilla in your gelato but rather vanillin.
      Yes in Italian gelato there is cream but in a lower amount compared to American style ice cream.

    Is it really necessary to pasturize vegan gelato? there is no egg or dairy so I'm curious what the purpose is. Is it because you are using raw nuts?

      No it's not necessary and it doesn't have anything to do with raw nuts, but the heating process helps with a lot of other things like dissolving dry ingredients, destabilisation of the fats, increase of aromas and so on.
