Tip: dont throw vanilla bean pods away after using the seeds! you can dry them out and blend them into a powder, then you have vanilla powder and it tastes more like vanilla than the actual seeds! hope this helps someone🤍

    Recipe:
    Ingredients:
    - 65 g sunflower butter (~3 tbsp)
    - 500 mL water
    - 500 mL pea protein milk
    - 200 g sugar (~1 cup)
    - 3.5 tbsp coconut oil (enough to get to a total of 100 g for the entire batch of ice cream)
    - 30 g tapioca starch
    - 1 tbsp vanilla extract
    Instructions:
    1. Combine sunflower butter and water in blender and blend for 1 minute.
    2. In a sauce pan over medium-low heat, add sunflower milk, pea protein milk, and sugar. Stir constantly until.
    3. Add coconut oil and continue whisking.
    4. Turn heat off, add tapioca starch while whisking rapidly.
    5. Once all tapioca starch is added, turn heat to medium-low and continue whisking rapidly until it starts to thicken.
    6. Once it starts coating your spoon or spatula, take it off the heat. Continue whisking so no skin develops.
    7. Transfer to another bowl (to help it cool down faster), place plastic wrap on the top of the mixture (to prevent a skin from forming). Put it in the fridge to cool as much as possible (at least a few hours).
    8. Remove from fridge, add vanilla extract and stir to combine.
    9. Add custard to your ice cream maker and follow ice cream maker instructions.

Seems a bit more like a semifreddo than ice cream. Not that that's a bad thing, semifreddo is absolutely delicious, but you will definitely get a different texture than if you go the traditional cooked and churned custard method of ice cream.

      Soak nuts and dates overnight.
Put drained/rinsed nuts a high power blender with dates (with some of the soaking liquid), add pinch of salt and flavor of choice. Blend until smooth (mixturewillbe thick), pour into container and freeze.

made this twice the first time was good but i didn’t like the coconut oil so i made a few tweaks this time. I wanted to try it with cashews so i used 60 grams of those and the two cups of water. I used soy milk both times cause the pea one was too expensive in my town. I swapped vegan margarine for the coconut oil and omg it was so creamy ! i also blended it after i cooled the mixture to make it emulsified better because the first time i found the coconut oil didn’t encorporate enough. this is such a great recipe.

Added steps that are important when making cheese and/or ice cream base in the Vitamix is to pour off hot liquid quickly into a bowl to cool and don't leave to sit in the blender! It will be a mess to get out of the blender later if you leave it for long. Also you can hear when the sauce has reached the thick cooked stage because the sound of the machine will start to bog down so stick around in the kitchen while the machine is running!

I use all the other ingredients that's normally added in the dipping sauce, but my base is either one of those homemade seed butters.

Yeah vegan coffee creamer would be great...a bit of oil and sugar is necessary though

There are literally so many. Just look in the same place as regular coffee creamer. Or just google it...being vegan is not difficult. The internet solves the issue of not knowing what to do.

Italian Ice is another good frozen treat. The trick is put about one quarter of pureed pineapple in your mixture. You won't be able to taste the pineapple and it gives it a beautiful texture and color. You can also substitute any fruit juice instead of lemon for different flavors.

The easiest vegan ice cream. Freeze bananas without skins. Take a couple of frozen bananas. Cut them into chunks. Put the chunks in a food processor with a bit of oat milk and a spoonful of peanut butter or tahini. Blend until smooth. Delicious vegan ice cream

This ice cream is absolutely delicious you can also use cashew butter, almond butter or coconut milk. Ripple milk is the only milk I use for cooking it makes the best ice cream, puddings, rice pudding or corn pudding, waffles, cakes, custards, cheese, cheese cake you get the pic. it is just the best. I made salted caramel OMG we couldn't stop eating it and I made strawberry for friends who came over for dinner and the adults literally pushed the children to the back of the line it was too funny they all said "it was the best ice cream they ever had."
