If you can't get maple sap you can make kefir from regular filtered water, but you'll have to add some sugar like molasses, brown sugar, turbinado sugar, etc. Happy Kefiring!
curious to know about how the fermentation continued after bottling and how the flavor evolved in the one with more sugar and see how it affected the carbonation. I feel like the kefir with no sugar added might not have had too much extra carbonation as opposed to the sugary one which maybe really popped off.
