At first I thought this was the same recipe I’ve been making since I was a teenager fifty years ago until you added the cheese. I make ours the same way but it has sour cream, orange zest, raisins, cinnamon and sugar layered and I fold it into thirds twice then cut into 1” wide lengths, drug through the cinnamon and sugar and then twisted. Bake at twelve minutes 400 degree oven. I will try your recipe though, looks lovely.
Tip: Instead of spreading butter with a knife, take frozen butter and grate it all over the dough, sprinkle cornstarch, place plastic wrap or parchment over the grated butter then roll it to press the butter into dough, then fold. Just use grated frozen butter.

According to available sources, pagáče are not entirely a Slovak, Czech or Hungarian invention. Hungarians consider them as their own, however, history is even more complex. The Hungarians took the name "pogácsa" (translated as a loaf) from the Serbs and Croats, who call it pogača, which means round bread. However, the origin of pogača goes back even further. The Turks brought them to these territories. They still bake traditional poğaça. Turks fill these "poğaçes" with vegetables, or serve them plain, unfilled. The Hungarians improved them with cracklings and probably also with cabbage and potatoes. So, why make a claim such you do?

when making dumplings/noodles cornstarch is used to prevent the dough from sticking to each other. By using cornstarch the moistness and elasticity of the dough are being preserved. Flour makes the dough hard and to much of it will ruin the elasticity.

In Slovakia, this is how we make greaves, instead of butter, ground greaves are painted on the dough during the first rolling :-) That's good - try it

I used to make biscuits for a fast food company. I noticed that when cutting the dough with a Biscuit cutter the person twisted the ring. I was taught that doing so will cause the dough to raise unevenly. Don't twist your cutting tool.

I was taught to not twist as it “sealed” the edges. That prevented an accurate rise.
