The maître d'hôtel is in charge of front-of-house, which is where Van was at the time. When in FOH you take your orders from the maître d', not the chef. The chef is in charge of back of house, i.e. the kitchens and food stores, but in this case he also had jurisdiction over JP. Typically Facilities will take care of non-food areas like electrical, but in smaller restaurants the chef might have responsibility.

gordon is the boss of the kitchen, he is responsible for safety and product coming out. JP is boss of the dining room as head waiter, he is responsible for the safety and professionalism of all staff on his floor. Not only does it look low class and undignified running in the dining room. dude was running around with pans and shit making a mess on top of being a hazard to customers by running around. It's very unprofessional to be running in the dining room.

JP might be correct, but he was still raising his voice in front of customers. He was also the only one raising his voice. He was still in the wrong and deserved a bit of a talking to.

Have you seen the full episode? While JP’s concerns are noteworthy, his reaction to yell at the chef in front of the customers was incorrect and I’ve reacted.
And before you say Gordon yells in front of customers at the chefs, that is the entire point of the show, in the same light as a Drill Sergeant to new recruits.
JP’s job is to the dinning area and not the kitchen, he overreacted. And definitely isn’t the better man for that ladies first comment.

JP tried to tell him several times to simply walk and stop wiping his sweat with his hands but the contestant kept insulting JP and told him to piss off. JP got fed up and when he tried to reason w/ the contestant, the dude was hostile abt it so JP told him off.

Sorry but that's not how life works.
At the same time, JP took it upon himself to fix it by arguing loudly infront of customers and thereby also stopping the flow of the kitchen. So a calmer approach would've made his side of the arguement stronger and would've lead to Gordon taking his side more. Both of them did mistakes there, and Gordon doesnt cut slack for mistakes
