    One potato? Sir I happen to be American and in America we happen to take pride in multiplying ingredients by at least 25 for a small serving

    Thanks for the recipie. As a tip for yall, I cut up about 7-10 large potatoes and do all the steps until the freezing part. Then I Take out the amount I want to eat, fry them the second time, and let the rest stay in the freezer, ready for the next 5 times I want to have good home made fries....saves alot of time.

    Nice. Blanching is needed to remove sugars (not starch) and the choice of the oil is important (McDonald's use soybean). If you store potatoes in a less cold place you need just one bowl of water to blanch them. To dry them more (having more cooking time without getting coloured) try to put something acid in the first bowl of fresh water (lemon juice would work as well). Let me know what you think and if you try it.

    It must be the boiling that makes most of the difference. I do a 2 cook method with frying everything at a lower temp, then second frying is done at a higher temp to brown what is already cooked through. I will give this a shot and see if there is a difference. Nicely done video. I enjoyed it very much. Best thing to do is make a whole bunch and freeze them. My grandson will be able to tell me if it's like Mcdonalds lol

    The other "secret" is that they add beef flavoring in the mix. They used to add a small bit of beef lard to the oil years ago, but changed the recipe to I believe beef broth, due to health concerns. Also, heard to soak them in a sugar/corn syrup mix also.

    Too all the people saying just buy them at McDonalds this is a process that can be done with say a whole bag. Once you put them in the freezer you can leave them for whenever. So in a week you have those same great fries but only the 4-5 minutes of cook time. The blanching process just needs to be done to get that crispy taste. Leave the skins on ad you have Wendy's fries.

  • @onwul
    @onwul 12 років тому

    There is a small trick here some of you are missing: you don't have to go though whole cooking process on the day you want to eat fries. You can prepare a lot of them sometime and get to the part where you freeze them. Then you will actually want to eat them, all you do is fry them for 4-5mins and you're done!

    i did this today, except i didn't blanch them i shallow fried them then dried the oil off them out them in a bowl and into the freezer and then waited 20 minutes (not as long as you did) after that they were very soggy so i was kinda worried but then i shallow fried them again just so they were crispy and they were absolutley sensational!

  • @budhunter09

    @scaledodger1 they're blanched at the factory before the fries are packaged to go to the restaurants. This is pretty much standard in the food industry. In/Out Burgers is probably one of rare exceptions. If fries aren't blanched then they will have that layer of starch on them and will not crisp up soon enough.
    It is more than apparent that a majority of persons are not motivated and they are more than welcome to eat whatever it is that McDonald's is serving them (GMO's, questionable edibles

    Not bad video, but probably a bit inaccurate. Potatos are made of mostly starch, but not loose starch as in the water. The fries are cut 1/4" x 1/4". The boiling water contains salt, which is why McDonalds fries are salty even if no salt added. The potatos are not just any potatos - mostly 90% are J. R. Simplot Russets. Often grown in Idaho with Simplot fertilizer (not organic potato). Such phosphate fertilizers contain trace Cadmium. So does normal table salt & oil.

    Can you completely freeze them, tho'? I believe MacDo stores them frozen themselves. This way, maybe you could make a bunch first, keep 'em in your freezer and take out a little basket or so as needed? After the prep time, I mean...it would only be like 4-5 minutes of frying for a nice side dish.
