    The guy critiquing everyone is struggling cutting a salmon on a red cutting board and he has all tools in the way being cross-contaminated. Nice example guy!

      Thanks for your constructive criticism. This video was shot during one of our many practice days, were our objective was to work on skills that we don't do necessary on a daily basis. Filleting fish was a skill that we practiced everyday, so as to master the technique. Color coded cutting boards aren't required for either a competition or a certification exam, so we weren't concerned about using a red one.
      The chef Critiquing everyone is Chef Jud Flynn CEC. Chef Flynn is an accomplished ACF competitor winning 67 national medals, 23 gold, and was on Team USA in Erfurt Germany 2000'.
      We're proud to announce that all 15 Chef Candidates successfully passed the ACF CEC Practical Exam, and are now CEC's, congratulations Chefs!
