i have 2 woks, 5 cast iron cookware and a carbon steel pan, this seasoning will not only inevitably flake off because of the flash rust it will also impart that into what you’re cooking when the seasoning wears off. you’re supposed to remove as much moisture before drying it on a stove to prevent flash rust or wiping it off with oil and tissues before bluing the wok.

First it is cleaned and heated till it turns blue and red. After that oil is applied. This is done 3 times. All that shade is not rust. If there is rust it will stick to the fingers if you touch it.
Mere paas Indian Wok hai (thick iron one). After preparing I wipe it with damp cloth (usually it is non stick so no resudue is left, if there is residue I scrub it off) and still oily layer is over it. For the next time use (used twice daily), I wash it with cleaning liquid just before using and invert the water out and the remaining water is dried off at stove. There is some rust upon washing and drying over stove but that is fine. Once all water dries up I put oil all over and use directly to cook food. Issue for me with seasoning is that if we wash it with cleaning bar/liquid, seasoning is washed off and we have to repeat is over again. So by using this technique I am able to prevent rusting, get satisfaction of deep clean everytime before use and also not waste any oil 😊
Once cooking is done, after washing a wok or any iron pan never keep it like that for long. Always season right after you wash before storage. This will avoid it catching rust. The rust which you see initially in the video is because it was not seasoned before storing the wok after it's previous wash.

Bhai.... I too use iron vessels but I don't take this much time, after washing i just wipe with lightly oiled tissue which takes 5 min time including washing. Your seasoning process is very perfect, but it takes lots& lots of time

I have heavy iron laddle and it is also seasoned the same way.. one more thing. Items that are cooked on wok take only few minutes thats also the reason why it has to be pre seasoned and pre heated
Thats why traditionally in India when a new wok ( kadhai कढ़ाई) is purchased poori (fried bread पूड़ी) is deep fried in oil. It is for celebration about purchasing new wok and also to season it.
This is how I seasoned my wok when I bought during covid lockdown down. There used to be lot of time just staying back at home. So tried cooking different things. This is one among. Once you master the making of fried rice, you won’t eat outside again!

The rust is still embedded in there. You can actually pour vinegar in the wok and let it soak for 24 hours to remove the rust
Tempering the wok and cleaning the wok are two different processes. Vineger will clean the wok but tempering still needs this process...
"seasoning" a wok is a different process. It's just like how you season a griddle in west

This is actually right way to make iron non stick Chinese wok. I was also didn't when i used to cooking at restaurant as a Chinese chef.
Now proceed to eat the seasoned wok
