    My wife and I made this a few nights ago and wanted say a massive thank you!! This is our new favorite meal. Up until now, your vodka sauce has been in the #1 spot, but this pasta is just perfect.
    To those asking if you can substitute with chorizo, I would say maybe. Personally. I wouldn’t. The nduja is more like a spicy paste, whereas chorizo would add significant texture and possibly overwhelm the meal with its intense flavor.
    We live in the Midwest and found nduja at Whole Foods and a local European deli. You can also order it online.
    I hope you all get to make this meal, and thanks again Steve. You have transformed how I cook and appreciate food.

    I’ve made almost all of your dishes covered, especially the pastas. This may be one of the single greatest things I’ve made.. and eaten.. ever.
    Spaghetti alla vongole is a top 5 pasta for me to start, but the mild spice and depth of flavor from the nduja (I used a prosciutto nduja sourced from Whole Foods), combined with the texture from the nduja breadcrumbs, and generous mix of basil/parsley… Wow.

    I've made a few of your recipes and always love them. My only complaint is that I live in the boring midwest and finding a lot of these ingredients, or rather QUALITY ingredients is really tough.

      I don't know if you have a Trader Joe's near you. If you do, they do have a Calabrian salami. It's in sliced form, not spreadable though. Some Italian restaurants may know where you can get some of the ingredients you need. Sometimes the restaurant has a store in it.
      Another source to check out online is the Pennsylvania Macaroni Company. The store itself is located in Pittsburgh. The store imports everything from Italy. Check out their pepperoni. It tastes nothing like American deli counter pepperoni.
      The store is located in a part of town called The Strip. It's where ships from around the world would dock to supply stores and restaurants with food.

    Back an neck issues? Try sleeping on the floor for one night! Beds an pillows usually make you feel achy after a full nights rest. Cause they add pressure to the body in some way.

      no idea whether you could find 'nduja in Westchester - but it has become more and more popular abroad as well. don't give up hope!
      as I wrote elsewhere on this page, I don't find it suited as an addition to "spaghetti e vongole".
      and I often find it a little bit of a "waste" (too strong of a word, but I'm short of a more proper one) to combine wonderful ingredients which I could better enjoy in separate recipes. If you find 'nduja, I would recommand to try making a sauce with a good slice of 'nduja, gently (and properly) stewed onions, a touch of fresh tomatoes (tomato paste might also do), a leaf of bay and/or some fresh mint leaves...
      let us know - if you can find it, and what you'd do with it!

    I miss eating stuff like this. My wife can't eat chillies as it makes her ill so rarely get the chance to eat spicy stuff. This looks incredible so might need to make it just for myself some time.

    Looks Fabulous! Love spicy food, though avoid carbs and still nursing the memory of eating clams in Cambridge, MA and spending the night in a hotel bathroom with food poisoning. Haven't touched a Clam since. I'll eat this one with my eyes only!

    Definitely have to try. In my normal Vongole (white sauce) I top the plate with sundried tomato. It’s a must try, even if you aren’t a huge fan of them.

    Unrelated thought, but if you haven't checked out an orthodontist about your morning headaches, you should. I have friends whose headaches decreased after some treatments. Not a dentist or orthodontist myself, Just someone that suffers from headaches too.

    I always pronounced nduja the way you did, but recently I heard local calabrians call it "ndusha". Apparently that's the right way

    Does anyone know how 'nduja compares with Mexican chorizo? I get that the chiles are different, but would it be a decent substitute; or are Mexican and Italian generally incompatible?

      They are fairly similar but Mexican chorizo is less spicy and has a.sweeter flavor.

    'Nduja is literally the italian version of mexican chorizo and I refuse to let anyone tell me otherwise
