Pri, jaggery is to balance the heat and tanginess of the gravy. It's ok to skip or replace it with some of sugar 🙂(white / raw / palm ) hope this helps, thank you!

Yes you may...some store bought sambar powders are pretty strong, meant are concentrated in spices & flavor. So adjust accordingly. Add more coriander powder while frying the onions to give thickness and a little amount of sambar powder. Hope this helps😊let me know 🙏Thanks!

I doesn't belongs from south. I got one doubt. Instead of adding water into masala for gravy thickness. Why didn't you add coconut milk to it ? Or That's completely different form of cooking other than Madras? Also can you mention different southern forms of cooking.
You can add coconut milk in the end for added flavor or thickness. But traditional fish curry does not include coconut milk. There many variations to fish curry preparations, each family has its own version. This is our family's recipe, my native is Madras, hence named it. Thank you 🙏
