I learned how to make lefse from my Norwegian grandma and my mom taught my girls. They're both gone now but I still make lefse every year with my kids and grandkids. Thanks for sharing!
Never would I have I thought up to roll potatoes and toast them in a pan. The idea alone of a flat potato is intriguing. Might definitely give this a try.
In India we call it as PARATHA in that we usually put potatoes and green chili mixed with flour it's so tasty. We also love to make in different versions too like onion, cottage cheese parathas etc. We eat this at breakfast and it's so delicious we enjoy with mango pickle.

I grew up on the South Dakota/Minnesota border and lefse is always made at Christmastime there. My aunt makes the most beautiful thin, moist lefse, but unfortunately, it's not vegan (as everyone around here adds butter.) My mom was kind and made some for me with coconut oil. They were really good. I will have to try your recipe though. Seems easier. :)
