I forgot to tell you, using your tips I've gotten decent at gumbo making. My 14 year old grandson and I made a chicken and sausage gumbo yesterday that was pretty dang good! Thanks for the advice.
Great change on an Old Favorite JB! , in Canada we use Chicken, Chorizo, and Shrimp with Rice and "Zatarain's" Mix if we can find it! Plus the Trinity!!
