My dad was a commercial Mississippi River fisherman when I was young. He skinned the head, removed eyes and gills. Mom made a delicious, simple chowder from the heads and backbones. We just called it fish head soup. Boil the bones and head long enough for the meat to fall from the bones. Remove all the bones, add onions, potatoes, and canned tomatoes. Cook until potatoes are tender. Salt & pepper to taste.
Well, finally as someone makes fish head soup sound not so bad. Never know. Might be something we try in a video down the road. Awesome story, love hearing those and God Bless!!
Best fish soup made Hungarian people. They combined carp and cat fish meat. Both fish fileted from the bones. Than head of fish and ribs cooking one hour. Than that should be strain into bowl. In the bowl will be soup with fish taste and a very little meet without bones. Than,when that get cold,in that soup should be added fish filets. Add paprika and,salt,paper and cook 40 min. The first part when bones anf fish heads cooking called"temeljac"(Serbian). From temeljac it goes to soup after adding meat and cooking 40min. Specialu cutting a little bones on carp and cat fish will made that soup with no bones. In America I didn't saw someone making that soup,,,, but in Europe,specialy Humgary,Serbia,Croatian, Bosinia,,,,, that is delicious. Best fish soup is when combined 2-3 kind of fish. Usuary,carp and cat fish,,,,,and third you can add,smaller fish with a lot bones,and it should be cooked at first cooking For second cooking is only added carp and catfish meat. I ran across this older video of yours and have a question: Can you use the fish carcass as bait for crab traps or for catching other fish? Often here in the PNW they will grind salmon carcass up for animal food or fish fertilizer after stripping the eggs for the fish farms.

Gotcha. They will slide on it, but I just hold onto them. The bigger issue is not dulling a knife when cutting fish up. These tote sides are like uhmw, or Teflon. Any Teflon you can find would work. I think you can buy sheets of it at like Home Depot, or order online. This material works better than wood and cleans up better
Nice technique, flatheads are by far my favorite catfish, and probably in my top 5 of all fish. Even the big ones taste amazing if you get all the red meat off. Think I need to upgrade to a electric knife though 🤔
No, I do not trim that lining. It fry's up and basically has no taste whatsoever. Only thing it does is makes your slices of meat curl up into a half moon shape. Just think of it as Casing on a sausage, but better 🤣🤣. If they trimmings that off, that means they didn't catch many or they wouldn't have time🤣🤣🤣

I usually fillet my flatheads and I save the belly meat for making catfish Bisque because the belly got more fat in it, it adds a lot of rich flavor. I skin and quarter the heads and save the Filleted backs for catfish courtbouillon.
Absolutely you can. We fillet the blue cat a little different because we don't keep bigger blue belly meat. It gets tough. We go in with the knife right behind the Ribs and down the backbone. You'll see this in some of our other cook and clean videos. Maybe we need to do just a blue cat cleaning video one day. Hope this helps and thanks for watching!!

I’ve got to get me a new electric fillet knife. I’ve got two and they both get hot on me too quick. I spent way too many years skinning and filleting them with a manual knife and don’t really want no part of them anymore.
That answer will be all over the board. Many like them the best. Some don't. My personal favorite is small channel cats, but it's probably because we eat so many flatheads. Can't go wrong with either. Blues are good small, filleted, or steaked up IMO. I like em all🤣

Crawfish season is coming to a close, but we do have one video on footage I'm gonna try getting out next week. Most people buy chicken for bait, but you'll see in the video how we utilize as much as possible from fish and wild game we kill. Keeping it real!!
With no disrespect, with hundreds of videos now and over 4 years of creating content to try and help other people for the most part, I've probably gotten this comment 5-10 times. We're not perfect by no means as to everyone's standards, nor claim to be. This is a busy world, and we have very busy life's. It's a huge struggle to bring regular content to you guys. I'm gonna say on average we spend $1000 a month through the year just to create content and 12-20 hours avg per long video to bring it to life. We do use speedy methods dressing fish at times culling backbones and ribs, but do the best we can with the time we have and manage to get the job done efficiently and store our freezers with great quality meat while doing so. The trimmings we cull make fish taste nasty at best. We're showing people the best way to put quality meat on their table without all the struggles. This video is and has been a Top 5 performing video since its release and I almost culled the video because it didn't meet my standards. I will say, if I had one fish, and one only, id probably prep it differently. Thanks for watching and commenting, I honestly have no problem with criticism, we're not perfect

@markdouglas8228 I promise you I was also raised with very little waste. My Grandfather worked for Corp of Engineers. He run the locks on the Ouachita river. My folks grew up basically living off the land. When I was a kid, I didn't get to shoot twice at a squirrel, nor did I fillet a fish. Wasn't a such thing untill I started commercial fishing at 17 years of age. I'd come in with a few more fish than Dad was used to. He would get so mad at me because id fillet fish. Problem was, people got to where they want fillets. Wouldn't buy whole big fish or steaks. Times have changed a lot. When commercial fishing you cut out what you can sell plain and simple, or what market will buy. I finally changed Dad's mind one day when I come in with about 500 lbs of channel cats. Yeah, that's not a lot to some, but it was to us back then. He looked at me and said, "Son, you know that filleting might not be a bad idea". After that he learned how to fillet himself and never looked back. Bottom line is we all are out there doing what we love, enjoying God's creation, and providing Natural food for ourselves or someone else. The alternatives to all those things are just bad. God Bless
I'm not gonna dispute that because I haven't tried it, but when we come in with several hundred pounds of fish, we'd be mixing a lot of vinegar and we just would have time for all that. I want my fish either cooked or in the freezer, fast as possible after cleaning. We stay so busy another step just wouldn't be efficient

Why is everybody so so so scared of catfish ribs ? They are not small and not hard to navigate after cooked. They do hold a good bit of meat. Unlike perch , crappie and bass, there are no fine bones to accidentally swallow
In central Texas, flatheads are quite a treasure ! My dad would roll over in his grave if he saw how much of that yellow cat you threw in the gut bucket
Nobody here scared of Catfish ribs, we eat Buffalo fillets and they have way more bones. There's no more meat on the ribs we cull than there is on the backbone. Facts are I've been dressing catfish since 5 years old (40 years).
If Flathead wasn't a treasure here in Louisiana, we would not fish for them. With all do respect, we run a pretty clean channel and try to help as many people as possible. We appreciate the views and positive and most of the time even critical comments, but your really trying to bash us over a thin bony peice of meat. I can take criticism as good as the next guy, but we go by the book and have as little waste as anyone in the fish and game we process. I'ma suggest if ya can't find anything positive in our channel, just move on. I reply to everyone of our comments, and after Thousands I've never answered one in this manner because I've never had as negative of a comment 🤷.
Your the type viewers that make it worth it. The ones that follow a channel. Haters don't bother us, hopefully they get a little education themselves. We use the Black & Decker Elect knife. I call it a fillet knife, but it's actually just an electric kitchen knife. I've used others that don't hold up as well. We also use Chicago cutlery Stainless knives. They are kinda a boning knife to me
Pretty often someone says this, however when you come in with 300+ lbs of fish it becomes a matter of using faster methods to get fish cleaned and on ice before it all ruins. Very little waste in our methods
Very little waist this is my method for any catfish any size a crappie a blue gill and the meat in back bone that people call waist is so thin you can see through it . Even skinning a fish you have some waist . But the electro knife is only way to go when you bring in as many fish as I clean also . No comparison
@rue2973 I gotcha. It's more habit for us. It was years before I was shown cheak meat. Never shown growing up. After cutting a bunch out, it just ain't seam worth it to me unless they 30 lbs or so. We catch a lot of flatheads at times and it would be ridiculously time consuming for me to cut them all out. Maybe I'll work on a quick easy method of doing it and show it in a video. We will see. Thanks for your input though, we good with it all, good, bad, whatever, long as we get the input!!
Not really. There is very little waste the way we clean our fish. That said if we only had one or two fish and needed it to go as far as possible meat wise we would possibly steak the catfish. As many as we have a lot of times we'd be there all day steaking fish. This video is just one of our videos showing many different ways. We show stealing and whole fryers in other videos. I'm sorry. I explain why we do this method a lot. It depends on number fish we catching. Better to get all the fillets if we got a bunch of fish than them ruining because it took us too long to dress. We do steak them at times, but we also fillet a lot. Also if your selling fish, people just ain't buying bones unless it's whole fryers or Buffalo

Lol, it's just a homemade table with a piece of Teflon I cut out of a Teflon tote. Been using it 25 years. Nothing special

I'm not even sure on that. Some are better than others, but any bait shop, Walmarts, or bass pro would have them.
Maybrun stainless are the best I've ever used. I use them on pork ribs too.

Dont forget the livers. If you like chicken and turkey livers ,catfish livers are the best. Bigger the catfish the better the liver.

With no disrespect, with hundreds of videos now and over 4 years of creating content to try and help other people for the most part, I've probably gotten this comment 5-10 times. We're not perfect by no means as to everyone's standards, nor claim to be. This is a busy world, and we have very busy life's. It's a huge struggle to bring regular content to you guys. I'm gonna say on average we spend $1000 a month through the year just to create content and 12-20 hours avg per long video to bring it to life. We do use speedy methods dressing fish at times culling backbones and ribs, but do the best we can with the time we have and manage to get the job done efficiently and store our freezers with great quality meat while doing so. The trimmings we cull make fish taste nasty at best. We're showing people the best way to put quality meat on their table without all the struggles. This video is and has been a Top 5 performing video since its release and I almost culled the video because it didn't meet my standards. I will say, if I had one fish, and one only, id probably prep it differently. Thanks for watching and commenting, I honestly have no problem with criticism, we're not perfect

@markdouglas8228 I promise you I was also raised with very little waste. My Grandfather worked for Corp of Engineers. He run the locks on the Ouachita river. My folks grew up basically living off the land. When I was a kid, I didn't get to shoot twice at a squirrel, nor did I fillet a fish. Wasn't a such thing untill I started commercial fishing at 17 years of age. I'd come in with a few more fish than Dad was used to. He would get so mad at me because id fillet fish. Problem was, people got to where they want fillets. Wouldn't buy whole big fish or steaks. Times have changed a lot. When commercial fishing you cut out what you can sell plain and simple, or what market will buy. I finally changed Dad's mind one day when I come in with about 500 lbs of channel cats. Yeah, that's not a lot to some, but it was to us back then. He looked at me and said, "Son, you know that filleting might not be a bad idea". After that he learned how to fillet himself and never looked back. Bottom line is we all are out there doing what we love, enjoying God's creation, and providing Natural food for ourselves or someone else. The alternatives to all those things are just bad. God Bless

Instead of cutting out red meat and removing some white eat with it some people soak the fish in ice water and white vinegar.
I'm not gonna dispute that because I haven't tried it, but when we come in with several hundred pounds of fish, we'd be mixing a lot of vinegar and we just would have time for all that. I want my fish either cooked or in the freezer, fast as possible after cleaning. We stay so busy another step just wouldn't be efficient

Why is everybody so so so scared of catfish ribs ? They are not small and not hard to navigate after cooked. They do hold a good bit of meat. Unlike perch , crappie and bass, there are no fine bones to accidentally swallow
In central Texas, flatheads are quite a treasure ! My dad would roll over in his grave if he saw how much of that yellow cat you threw in the gut bucket
Nobody here scared of Catfish ribs, we eat Buffalo fillets and they have way more bones. There's no more meat on the ribs we cull than there is on the backbone. Facts are I've been dressing catfish since 5 years old (40 years).
If Flathead wasn't a treasure here in Louisiana, we would not fish for them. With all do respect, we run a pretty clean channel and try to help as many people as possible. We appreciate the views and positive and most of the time even critical comments, but your really trying to bash us over a thin bony peice of meat. I can take criticism as good as the next guy, but we go by the book and have as little waste as anyone in the fish and game we process. I'ma suggest if ya can't find anything positive in our channel, just move on. I reply to everyone of our comments, and after Thousands I've never answered one in this manner because I've never had as negative of a comment 🤷.

Looks like you're using a boning knife rather than a fee-lay knife.
We use the Black & Decker Elect knife. I call it a fillet knife, but it's actually just an electric kitchen knife. I've used others that don't hold up as well. We also use Chicago cutlery Stainless knives. They are kinda a boning knife to me

Pretty often someone says this, however when you come in with 300+ lbs of fish it becomes a matter of using faster methods to get fish cleaned and on ice before it all ruins. Very little waste in our methods
Very little waist this is my method for any catfish any size a crappie a blue gill and the meat in back bone that people call waist is so thin you can see through it . Even skinning a fish you have some waist . But the electro knife is only way to go when you bring in as many fish as I clean also . No comparison

@rue2973 I gotcha. It's more habit for us. It was years before I was shown cheak meat. Never shown growing up. After cutting a bunch out, it just ain't seam worth it to me unless they 30 lbs or so. We catch a lot of flatheads at times and it would be ridiculously time consuming for me to cut them all out. Maybe I'll work on a quick easy method of doing it and show it in a video. We will see. Thanks for your input though, we good with it all, good, bad, whatever, long as we get the input!!

Not really. There is very little waste the way we clean our fish. That said if we only had one or two fish and needed it to go as far as possible meat wise we would possibly steak the catfish. As many as we have a lot of times we'd be there all day steaking fish. This video is just one of our videos showing many different ways. We show stealing and whole fryers in other videos. I'm sorry. I explain why we do this method a lot. It depends on number fish we catching. Better to get all the fillets if we got a bunch of fish than them ruining because it took us too long to dress. We do steak them at times, but we also fillet a lot. Also if your selling fish, people just ain't buying bones unless it's whole fryers or Buffalo

Ya know even the fat gets trimmed from the steaks and pork chops you eat. When we get done there is very little waste, especially on flatheads.
