did you leave the backstap pieces in the shell? those 2 tidbits are worth keeping on snapping turtles at least.. requires cutting through the ribs beside the backbone on the top shell

I knew it would be worth it on snappers, but in looking at a softshell, just didn't look like much there to me. Their shells are flatter, so no rise in the arch part or room for much there. Maybe someone will correct me. We learn from you guys comments also

It's good, but leave the meat in strips or put on a stick so it don't fall through grating. You'll have to tweek it to your taste a little on the salt, and sugar, but it's really good. I'd start off on the lesser salt first go because the soy has salt also

Y’all have any duck hunting videos? Only La duck hunting I’ve done is in Fish Lske and Mossy. But every time I drive across Darbonne in season and see blinds and decoys I wonder what they kill there. Seems like a blackjack haven to me! LOL

    • @godscountryhuntingfishing1638

I was about as hard core as there was in North Louisiana back in the day. Give it up, chasing wings turned into crazy mornings of aggravating people, people that will have hard lives because their Dad's and Moms didn't teach them the respect for others like my Dad did. Ducks ain't worth Going to jail over, and that's what Duck hunting has turned into in these parts. It's a crying shame, but easy access to public lands created by Tax dollars has not only destroyed the way duck hunting was, it's destroyed the habitat. It's funny, always a biologist makes those calls too. Federal Tax Dollars might I add. It could be fixed, but only if feds created more sanctuary, put habitat in North Louisiana back like it used to be, and made access work. When it was good, you had to carry your decoys half a mile before light. When they made it so you can pull up to your spot, (in the middle of what was once SANTUARY), in your mud boat and throw decoys, North Louisiana quit holding ducks. I'm not a biologist, and even I understand that to hold ducks, they have to have a safe haven, with Food and Water

That is exactly why I gave it up. I was fortunate to hunt Overflow for 25 years in its hay day, and it didn’t get any better than that. And even Felsenthal was good for years. But like you said, today’s hunters don’t respect the resource or each other. I have a friend down there, Randy Tucker, that was a good duck hunter. I never got to come down and hunt with him though. I think he lives on the lake.

For the French classic dish turtle soup green sea turtle is a protected species. Soft shells would be a close alternative. The broth is made from the fat inside of shell with small cubed pieces of meat and if it's a female the undeveloped eggs (just the yolks). Are soft shell turtles farmed? Are cooters and/or snappers farmed?

do people who eat softshell turtle in the US ever eat the shell? when i see chinese cooks making softshell turtle, they braise the shell along with the meat, and they eat the outer, softer "skirt" part of the shell. apparently it is very rich in collagen so requires a long braise to get the right texture for eating, but its pretty common to hear asian folks say that the turtle skirt is their favorite part of the turtle to eat. every time i click on a USA softshell turtle cooking video, im hoping to see folks eating the shell and describing it a bit in english, from an american perspective, but i never see anyone actually cooking or eating it.

That said I'm still not understanding that there is anything wrong with just skinning them as long as the skin is disguarded. Seen a lot of people do it that way. While this was a cleaning video, our focus was not really cleaning, it was more the cooking end and showing a new recipe people could use on various meats.

I don't marinate any meat. I don't bbq any meat. I like to taste the actual meat. I'd chicken fry this turtle. I would bread it in flower using the juse from the meat to cause it to stick. I'd cook it in a cast iron skillet. I don't care for deep fried meat.

All that yellow stuff is not meat. Not 100% sure but it was explained to me as that stuff is the pollution in the water that collected in them over the years.
