Fish isn't supposed to taste or smell "fishy". That indicator usually means they've gone bad. Good quality fish is fresher and should be more similar to a clean "ocean" smell/taste with a natural sweetness to it. It's hard to describe if you haven't had good quality seafood.

I hate that this pie doesn't habe pastry at the bottom. Obviously o see the issue for him if he was to have a base but still it's litrallt a fish casserole with a pastry lid. Not a pie. There must be a way (considering his a very experienced and knolledgavle chef) to find a way to allow for the base to he made and implemented into the dish
