17:50 the fumes only happen when you're too close to the meat with the torch flame, the type of torch Guga uses can get a bit closer but still too close and you smell and taste the fumes. Also, propane is not kerosene.
It's hilarious seeing Frenchie so passionate and excited. Last time I got this excited for food was over a dish I was able to cook with all the easily acquired stuff from a Walmart and no special equipment. I made Korean Army Stew because it was featured on an MxR Vlog video and my family ate the entire massive stew pot's worth in two days. A dish that took me maybe an hour of prep, then two hours of letting some of the meats marinate in soy sauce or salt, then about an hour of cooking - gone in like two days to four people that usually don't even finish a normal sized meal over the course of a week. Lol. Best compliment I ever got. Words cannot express how much joy I get seeing so dudes just being dudes being wholesome, good at making food, telling one another they're good at making food at giving one another good feedback and just hanging out. I genuinely want to hang out with them and learn how to cook. ( If my crippled self could stand on my busted leg for more than an hour. Lol. )

Watching Guga's videos the original definition of amateur comes to mind.....now it means a newbie....but originally it meant for the love/passion of something, and that's what I love ve about him.....that love for food is there! What you don't get about Guga's blowtorch is it runs on propane, the same little cans you use for a camp stove. So I don't know if you'd pick up the smell at all. He likes using the torch because, in his own words, "It's painting with fire." And who are we to argue with the vision of the artiste?

That potato dish is extremely similar to a dish I like to make now and then. I usually add onions and tomatoes though. I remember that he previously made Hasselback potatoes, which is a classic Swedish dish, so I kind of wonder if he got a Swedish cook book for Christmas at one point
@@ChefBrianTsao The recepe I use comes from a cooking book I was gifted around 35 years ago, and has IIRC 100 different potato recepes, many of them similar to that one. It's called "låda", lit "box", and are basically variations of potato gratins. Forgot to say, I also add cream and/or milk

Not gunna lie, this is probably my new favorite reaction video. Period. Not just favorite "Reaction by Chef Brian", I mean full on favorite reaction video.
Chef Brian, I found you because of that video with Guga where you brought the sandwich. Lately, I've been watching some of your older videos (hence this comment on a 6 month old video). You and Frenchie are a great duo. My compliments to the chefs! Also, I'm glad I'm not the only one that picks up that hint of dinosaur juice when somebody hits food with a blowtorch. The first time I experienced it I mentioned it to my wife and she said I was imagining things but I've tasted it several times since and now you guys confirmed it.
Guga's side dish was BOMB. I made a couple of my own tweaks. I browned the ground beef first. Over that I did a layer of cremini mushrooms sautéed in butter and the beef fat. Over that a layer of mirepoix (only lightly sautéed since it'll be baked). Over that I made a red wine reduction sauce thickened with beurre manié. Then the top layer of potatoes. Baked at 425F for 30 minutes, added the egg-cheese sauce, and baked another 20 minutes, turning on the broiler for the last 5 minutes. Glorious! Never would've dreamed this up if I hadn't stumbled across this reaction video. Thanks, guys!

Guga tested and compared searing methods. The important difference is the size of the torch and what part of the torch touches the meat. the large size reduces the time and more importantly let's you keep only the blue tip touching the meat. The clear central part of a gas flame is where the chemical reactions are happening and letting that touch the meat deposits all the unburned fuel taste. Kitchens cook meat over gas grills all the time and if it always left a bad flavor everyone would avoid it if possible. Most kitchens have much smaller torches and are usually built to burn like a brazing torch out of a hardware store. This means it's built for a fast and tight flame for max heat. Compare that to the loose spread out flame from his torch. It's more a weed burning torch style for spreading the heat out broadly and burning all the fuel it can then just a focused point at max temp. The tool and where you
Ment to say where in the flame you touch the meat determines if you get a off taste from the torch, PS charcoal and wood can have the same issue of bad flavors added if burned incorrectly

The important difference is the size of the torch and what part of the torch touches the meat. the large size reduces the time and more importantly let's you keep only the blue tip touching the meat. The clear central part of a gas flame is where the chemical reactions are happening and letting that touch the meat deposits all the unburned fuel taste. Kitchens cook meat over gas grills all the time and if it always left a bad flavor everyone would avoid it if possible. Most kitchens have much smaller torches and are usually built to burn like a brazing torch out of a hardware store. This means it's built for a fast and tight flame for max heat. Compare that to the loose spread out flame from his torch.
