Just loaded two large trays with 15 bean soup.🤤 I’m also gonna mash up some sweet potatoes. I canned a few years ago to add to it. I hate having empty shelves when I run Betty.

Here is a quick google search "cooking beans with acid" results of search: "Using acid when cooking dry beans does hinder the beans' ability to soften appropriately, resulting in extended cooking times and an uneven, unpleasant texture. Add acidic ingredients, such as tomatoes, vinegar, or citrus, late in the cooking process, or use them as a post-cooking seasoning."
Speaking of salt, my dr. Asked me how i was doing on my salt intake. I told him i was able to stop putting salt on my salt!!!!!!!!😋😋😋😋..i am a salt-o-holic!😁
I just did one tray of my left overs and yea, you needed cornbread. I dont use the flavor packets. I really don't like them. I didn't add tomatoes to mine. I will have to try that recipe on the back sometime. I mostly just throw a few onions in, some ham and broth and I like it really soupy . a big bowl with crumbled up cornbread. yum yum.
I’ve got a ham bone in the freezer that I need to do something with. This might be it! Instead of throwing away all the fat that was skimmed off, what about keeping in and using it to make omelette or scrambled eggs?

You CAN cook beans with salt and acidic things like 🍅, but it takes longer and you will get a baked-beans texture!

I never use the flavor packet, because it makes it too salty. I use Mrs Dash instead. I love using ham hock, but for freeze drying I use ham.
