28:10 I have always been quite impressed with the folks at Trader Sam's, but seeing this guys level of devotion to tiki bar-tending and insight is incredible! The discussion about gimmicks that start rumors- then using that to your advantage really resonates.
By far the most longest, funniest, and educational episode of the 'Spike's Breezeway Cocktail Hour' 👍🏻 (As well as my favorite) Loved every minute of it. Kelly's pro tips were the "overly involved garnish idea" on top. Lol #AKOLEMALUNA 🍹
Whenever you and Kelly can work it out, I'm sure another episode will be a hit! He had so much content to share and the rapport you two have was so fun.

I love Kelly Merrell and miss seeing his face around Trader Sam's. Great episode Spike! Hearing both of you banter also really made me miss Tiki Oasis and watching the Hula Girls in those little cramped room parties. This little community is full of great people. Thanks for bringing them out of hiding...and bring Kelly back again, he's great!

The young bartender said he was not sure if he had all the stuff to make that before I could tell him. His partner casually stated I'll show you. The young bartender was so deflated when he made a rum and coke with lime. He look wide eyed back at his partner and hollered That's It!

One of the best tiki bars with FX is here in Phoenix. Undertow... It's basically themed as if you're inside the hull of a ship. Little portholes let you see the ocean and the voyage. Sometimes you're attacked by pirates or come into a bay to dock. Fantastic cocktails too. They do it right.
Another wonderful vid, kinda great just listening the both of you talking. I don’t know if there is any truth to it but I learned in Mexico to chose limes with thinner skins for more juice.
The rain/sprinklers thing is actually from the Molokai bar at the Mai Kai in Ft. Lauderdale. (The thunder sounds come from the valets driving over the wooden bridge by the entrance, which echoes inside.)

First of all, I definitely need a case like Kelly's, as I truly don't have a proper case for taking my tools outside my house. Second, that story about the origins of the glass had me fooled.. I was honestly wondering why I hadn't heard that yet.
As a vegan alternate to butter, I use Coco Real... Obviously it is not exactly the same flavor, but it still very good, and will keep in the fridge for a several days/weeks without solidifying.
loved this episode! FWIW I make a Gardenia Mix that tastes amazing and lasts for months. It took many attempts and experiments but most recipes out there get some fundamental principles of viscosity wrong!

Use ghee instead of butter, add lecithin, and stick blend to make the gardenia shelf stable and keep it from separating. I make it in bulk.

TL:DR ... Gardenia Mix: 2 TBSP butter, 1oz honey, 1 tsp cinnamon syrup, 1/2 tsp vanilla syrup, 1/2 tsp Allspice Dram. Pearl Diver Punch: 3/4 gardenia mix, 3/4 lime, 1oz OJ, 1 tsp Falernum, 1,5 Gold Rum, 3/4 Demerera Rum, 1/2 Plantation Pot Stilled, blend with 6oz ice ... double strain
