Smoked Chuck Roast on the Weber Kettle

  • Hey Guys!
    So this was a fun experiment that we did. I wanted to see if a smoked Chuck Roast would be comparable to a brisket. To our surprise it was more similar to a Beef Rib! Still very delicious though. This is a great option if funds are tight or you want to try something different.
    I’m still loving the quality of the Harder Charcoal. It did great for this cook.
    I used Thick Meat from Uncle Steve’s Shake on this and the color and flavor were perfect.

    This was a great cook man. Also one thing: When I saw you use your claws to grab the meat to place it on the paper my mind was completely blown.
    I own those same claws and had never thought of using them this way. Lol It may sound funny but true story.

    I really like chuck, it’s a great cut and does well for a lot of dishes. That looks really good Jared, nailed the tenderness and juiciness. Awesome job brother!

    I love chuck roast! That looked perfect with tons of juice and man, very nice smoke ring! Makes for excellent sandwiches too!

    Nice job buddy!! I live in Washington state. Going to try one tomorrow on my camp chef pellet grill! Thanks for your good advice! I will use it tomorrow. I am marinating it over night in my seasonings. I hope it doesn’t affect my bark in the wrong way. 🤦🏼‍♂️ I am going to try a smoke tube while it cooks too. First try for me, so who knows! I hope I can find you again to let you know. I used A1 as a binder also. Vinegar, but also corn syrup so….🤷keep you posted if I can figure out how. 🤣 thanks for your video pal!!

    Besides the run-of-the-mill roast, I’ve smoked a Chuck Roast, but just to make part of a beef stir fry, and for Philly Cheese Steak. When I saw that we had 2 of them forgotten in the deep freeze from a couple months ago, I’m eager to have a non-brisket brisket experience.

    Hey man that was an impressive cook for your first time with a chuck roast, I just had beef ribs this weekend but I got to tell you I really want to try the chuck roast. What was the grade on that chuck roast that you cooked? That cook won me over as a subscriber, so congrats again on a fantastic cook!

      Just like on a brisket 205 and let rest for a hour or more if you can

    What were the air vent settings... top and bottom?

      Bottom was 1/2 open and top was a 1/4 of the was but it may run different where your at so this is a good starting point

      If you have a meat probe cook it till it hits 203-205 my Weber was running about 250-275

    Chuck isn't a poor man's Brisket. If a Chuck had the mass of a Brisket it'll cost MUCH more, definitely a better cut of meat.

    It was dry. I think it was my roast. Great flavor though.
