    Juicy 'N' Delicious Ginger Miso Eggplant Rice Bowl
    Difficulty: Easy
    Time: 30min
    Number of servings: 4
    Ingredients:
    1lb eggplants
    200g (7oz.) ground pork *chicken tastes good as well
    A
    * 2 tbsp. Miso
    * 2 tbsp. Mirin (sweet Sake)
    * 1 tbsp. sugar
    * 1 tbsp. soy sauce
    * 1 tbsp. grated ginger
    1 tbsp. cooking oil
    1 tbsp. sesame oil
    cooked rice
    chopped green onion if you like
    toasted white sesame seeds if you like
    Directions:
    1. Chop eggplants into chunks and soak in water to remove the bitter taste.
    2. Heat cooking oil in a frying pan and stir-fry the eggplant until coated with oil. Add ground pork then cook until no longer pink. Then add A and simmer until the liquid is almost gone and tender. Mix in sesame oil to finish.
    3. Serve on a hot bed of rice, then top with chopped green onion and toasted white sesame seeds if you like.

    Your first child is already two years old? OMG time flies so fast!!!!
    By the way, I don't know what is with eggplant, i always liked it, but in the last month, I just cannot stop eating it. I make it with onions and tomatoes, maybe pour some red wine on it, and I just eat it with rice....For some reason, it is just a killer combination. Really addictive as you also said.

    I always eat this! But my mom's recipe uses chinese black beans instead of miso but i'll definitely try this. Ground pork and eggplant is just the perfect combi

      not the same (not that dense) but you can use the big ones for this dish. i used to make this with big ones when i used to live in the states and it turned out just fine :)

    ahh i make the same thing but more thai style (by adding a little shrimp paste as part of the sauce and tons of fresh thai basil at the end bc i looooove fresh thai basil)!!!!! and yes, best over plain/steamed white rice!!!! im craving this now...

    I only had leftover ground beef in the fridge, but it was still tasty! I think it would be better with pork though. I also like garlic so I will try with a little grated garlic next time! 😋

    I really like eggplant and miso but am scared what to do with the rest of the miso. Do you keep the rrst of the miso paste in the container in the fridge and how long can you keep it for?
    also what else can you use miso for apart from this recipe and maybe a soup base, any ideas please? thanks.

      yes you can keep miso in the fridge. it is better used as soon as possible however, i keep it for over 2 months~ hahaha btw, there are many miso dishes. you can search my channel for those ;) stir-fried recipes are good, too.

    what can i use instead of mirin ? I dont eat any pork dishes and anything w/ alcoholic ingredient. so for meat i can use chicken or beef but what about the mirin is there a substitute or should i just skip it?

      Saida dry sherry. You can just skip it if you don't have it or want to use it.

      you can add 2 tsp. of sugar instead of 2 tbsp. of mirin. or you can skip it if you think the dish is sweet enough for you. of course it is better to add Mirin (tastier) than sugar

    Soak in water for how long? I've NEVER soaked eggplant prior to cooking.

      I believe you soak the eggplant until you're ready to cook them, so maybe just a couple of minutes?

      o.o Sorry for trying to help? If you watched the video you can see that she said to prepare the seasoning sauce while the eggplant was soaking, and then she removed the eggplant from the water when she was ready to cook it. I don't know what those acronyms you wrote stand for but if you're going to be so rude about someone trying to help you then maybe you just shouldn't soak your eggplant.
