I'm pretty sure Allosaurus/Saurophaganax and Stegosaurus is coming along with Apatosaurus/Brontosaurus

The confirmation of Apatosaurus in update 12 kind of makes me wonder what other animals are going to be added to the upcoming update. Here are two different speculation lists depending on what kind of theme they're going to go with:
Sauropods: Alamosaurus, Amargosaurus, Dreadnaughtus.
Jurassic Giants: Allosaurus, Ceratosaurus, Stegosaurus.

Allosaurus and Stegosaurus are confirmed to arrive before Early Access ends so that would make update 12 fantastic. Other sauropods are less likely but in past lists we saw Diplodocus and Plateosaurus which are also very unique sauropodomorphs. I'd love to see representation from rebbachisaurids and dicraeosaurids.

Yes you are correct diplodocoidea is the superfamily that includes the basal member Haplocanthosaurus, the family rebbachisauridae (things like Nigersaurus, Rebbachisaurus, and Limaysaurus), the family dicraeosauridae (like Dicraeosaurus, Amargasaurus, and Brachytrachelopan) and of course diplodocidae (like Diplodocus, Apatosaurus and Supersaurus).

I would also like to edit the fences, like I can in Planet Zoo. Water is still too difficult; I really like the water system in Planet Zoo. The game is fun and creative, but I think they have still a long way to go.

I think they're pretty set on both wishes. The fences are set heights and if you don't like the designs the developers might be persuadedd to add more windowed and solid variants but don't count on changing height. You can always create a custom fence.
The water system in PZ is based around voxel terrain editing which would require PK to start from scratch if they desired it. True, the current form can be improved but only thinking within the box.
