Homemade Brioche Burger Buns - Soft & Fluffy

  • I've always kind of thought Brioche buns were the snootiest of all burger buns, but this recipe right here makes me want to eat them daily! (And we don't usually eat those carbs!)

    RECIPE:
    - 500 grams (4 cups) all-purpose flour
    - 10 grams (2 teaspoons) instant yeast
    - 50 grams (1/4 cup) sugar
    - 10 grams (2 teaspoons) salt
    - 50 ml heavy cream
    - 200 ml (1 cup) warm milk (about 110°F/43°C)
    - 100 grams (7 tablespoons) unsalted butter, softened
    - 2 large eggs
    - Egg wash (1 beaten egg with 1 tablespoon of water)
    Instructions:
    1. **Mix Dry Ingredients**: In a large mixing bowl or the bowl of a stand mixer, combine the flour, sugar, yeast, and salt. Mix well to distribute the yeast evenly.
    2. **Add Wet Ingredients**: Add the warm milk/heavy cream, softened butter, and eggs to the dry ingredients. Using a dough hook attachment, mix on low speed until the ingredients are combined, then increase to medium speed and knead for about 10 minutes, or until the dough is smooth and elastic.
    3. **First Rise**: Remove the dough from the bowl, shape it into a ball, and place it in a lightly oiled bowl. Cover with plastic wrap or a damp towel and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
    4. **Shape the Buns**: Turn the risen dough out onto a lightly floured surface. Divide the dough into 10-12 equal pieces. Shape each piece into a smooth ball by pulling the dough underneath itself. Arrange the buns on a baking sheet lined with parchment paper, leaving space between each bun. 5. **Second Rise**: Cover the shaped buns with a damp cloth and let them rise for another 1 hour, or until they puff up and nearly double in size.
    6. **Preheat Oven**: About 20 minutes before baking, preheat your oven to 375°F (190°C).
    7. **Apply Egg Wash**: Just before baking, gently brush the buns with the egg wash to give them a golden, shiny finish.
    8. **Bake**: Bake the buns in the preheated oven for 15-20 minutes, or until they are golden brown on top and sound hollow when tapped on the bottom.
    9. **Cool**: Remove the buns from the oven and let them cool on a wire rack.

    My wife has celiac's and can't eat gluten, but we DID just get my mom's old kitchenaid refurbished for our kitchen and I'm going to make these just for myself and my son. Hold me to it. I'm gonna do it!

      You could try using 1 to 1 gluten free flour. I’d be curious to see how it compares!

    They look great, my friend. I'll try to give them a shot this weekend. Do you think this recipe would work to make them into hoagie rolls? I think I am going to roll with some chopped cheeses this weekend. Thanks for sharing!

      Definitely, mix a in a bowl until it’s combined and then knead it on the counter for 8-10 minus
