- I've been wanting to recreate the homemade version of the Asmongold pizza for quite some time now and I figured since he keeps getting cancelled, now is as good a time as any. :)

RECIPE:
7g (1 packet) active dry yeast
4g (1 teaspoon) sugar
240ml (1 cup) 110F warm water (43°C to 46°C)
315g to 375g (2 1/2 to 3 cups) bread flour, plus more for kneading
30ml (2 tablespoons) olive oil, plus more for the bowl
5-7g (1 teaspoon) salt
1. Activate the Yeast:
-In a large mixing bowl, dissolve the sugar in warm water. Sprinkle the yeast over the water and let it stand until frothy, about 5 to 10 minutes.
2. Make the Dough:
-Add 315g of flour, olive oil, and salt to the yeast mixture. Stir with a wooden spoon until a rough dough forms. If the dough is too sticky, gradually add the remaining flour (up to 60g more) until it comes together. OR add to stand mixer, and knead with dough hook for 6-8 minutes.
3. Knead the Dough:
-Transfer the dough to a floured surface and knead until smooth and elastic, about 5 to 7 minutes.
4. First Rise:
-Lightly oil a clean bowl and place the dough inside. Cover with a clean, kitchen towel or plastic wrap and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
5. Prepare the Pan:
-Prepare your stainless steel pan by lightly oiling the bottom and sides.
6. Shape the Dough:
-After the dough has doubled, punch it down. Transfer it to your prepared pan. Gently stretch and press the dough to fit the size of the pan, creating a raised edge for the crust.
7. Preheat the Oven:
-Preheat your oven on Convection mode (if possible) to 450F or 232°C.
8. Top and Bake:
-Add your sauce, cheese, and toppings. Bake until the crust is golden brown and the cheese is bubbly, about 12 to 15 minutes. If the top is done but you want the bottom to be crispier, transfer the hot pan to your stove and cook on the burner for 3-5 minutes on medium. Check and continue as necessary.
9. Serve:
-Allow the pizza to cool slightly before slicing and serving.

bro you're about a billion steps too far in for any sort of asmongold pizza right off the bat.
what you do is you pick up a 3 pack of golden home premade pizza crusts for $4 and use that.

Those golden home thin crusts are actually great for making deep dish pizzas in a cast iron skillet, just gotta cut a wedge out so it sits down in the pan. try it sometime!

In the UK here when making bread, I switch just the oven light on and thats good enough to make it a little proving box. Might give this pizza a go !

Great video ! I have been doing "cast iron" pizzas for years and they are amazing. Don't forget the broiler if need to get the top of that crust bubbling with curly crisp pep. Glad you mentioned the heating pan on the stove for a crisp crust bottom, this is what makes the "cast iron" pizza full-proof. Any amateur can have great pizza at home without having to pay ridiculous prices.
Yes, the broiler is definitely key for those that like an extra bubbly top and for cup and char pepperoni! That is my favorite!
Very solid looking simple dough recipe. I think it's very close to what I use for pan pizza. You really loaded up on the extra tips, and that's a really big help for people doing this. Pretty good sequel to an epic video you made, brother! Looking forward to what's next!

You should check out Cyr's Pizza Friday videos (another OTK member in case you weren't aware) - he has guests over (often other OTK members), trying to perfect his pizza.... The funniest I saw was with Will Neff (now in OTK as well!) - think you'd enjoy them!

I DO! The sauce I used at the end was a homemade sauce.
I made this last night - turned out great! a bit misshapen, but delicious. kept it basic, just cheese and pepperoni. I'm thinking bacon and olives for the next attempt

Will definitely try it, with a couple of tweaks though: I prefer 0-0 flour and I have a pizza stone!
The weekend after I made this, I made an 80% hydration version of this dough and let it ferment for 2 days and cooked on the grill on a stone and it was pure bliss! Love to know how you change it up!
