I would pick the first kit only because the house kit can be a little intimidating to build. Both look very fun and would make wonderful pre-holiday gifts for friends and co-workers. Do you sell your kits?

I know I’m very late to this video, but as long as the icing isn’t exposed to air, it won’t harden. Leaving some room for the receiver to “knead” the icing in the bags would be recommended as the icing will separate on its own.
In a fully sealed contain or ziplock bag I keep mine up to a week. You may have to re-mix it or agitate the icing you have already bagged but you should be good. I know there are cookie decorators who will keep their icing longer, I just find mine doesn't hold the same consistency after the week mark. My recipe calls for meringue powder where some use egg whites. I am not sure how long that would keep. Hope this was helpful!

I charged $20 for a box with 6 undecorated cookies and 3 bags of icing. They sold well in my community especially while quarantine was in full swing, and moms needed to entertain their kids. I did safe porch pick up, and had a great response!

With that being said, the royal icing should last about a 5-7 days if not refrigerated.

I use an ice cream scoop and put one scoop per bag. It's about a handful and more than enough.

StephysTreats I usually make a batch using 2 lbs of icing , then I portion the icing into the kits. I do about a cup in each bag and 2-3 bags per kit🥰
