I noticed that too, at first I thought it was a stylistic choice to omit the hat, but then I noticed him trying to fix it around 6:00. He looks pretty pissed for a moment about the stripped clutch!

Those are sum hip voicings, voice leading. Lund's comping style is unique, he can go old school jazz guitar to modern hip harmony in the same song.
I highly recommend you check out his masterclass on JazzHeaven if you're a guitarist. It's pure gold
