- The Lone Star State's distinctive barbecue is getting some impressive variations, with the help of pitmasters with roots in such places as Egypt, Vietnam and Japan. Correspondent Lee Cowan talks with some of the new bright lights of Texas BBQ, and with Daniel Vaughn, barbecue editor of Texas Monthly. (This story was originally broadcast November 19, 2023.)

that chef had an interesting perspective about him not seeing his restaurant as being fusion. Like, we typically don't consider Italian-American food "fusion" because in essence, it's Italian cooking with the ingredients that were available to them in the US, kind of like his restraint seems to be Japanese cooking with the addition of a few local ingredients. If he were serving Jalapeno poppers on the side that would be fusion, but from what i saw the style seems fairly traditional.

I know a lot of my family would look down upon all the bbq featured in this piece. They would claim it's not real bbq. But, it would have nothing to do with them being foreigners. My family is from Western North Carolina. They look down upon Eastern North Carolina bbq, definitely down upon South Carolina bbq, and pretty much any place that's not Western North Carolina. However, if the people who were featured in this piece were to live in Western North Carolina and did their spin on that bbq, then they'd be happy to embrace them. I think a lot of places in the country that are famous for bbq feel this way.
I know I know nothing about bbq but for me, good bbq is good, smoked/grilled meat, not tasteless grilled meat covered in sweet sauce.
I'm in Winston Salem and had now idea that within NC itself there are East and West styles of BBQ? I know SC is mustard-based but thought all of NC is basically vinegar based??
Eastern BBQ goes whole hog into it, quite literally. As the saying goes, they use “every part of the hog except the squeal.” The whole pig is smoked when it comes to the East. After smoking the meat, Eastern North Carolina-style barbecue is then finished with a simple vinegar based sauce. Here, the meat is the star.
Western style, or Lexington style BBQ, uses a red sauce seasoned with ketchup, vinegar, and pepper, along with other spices that may vary from recipe to recipe. Whereas Eastern style uses the whole hog, this style utilizes only the pork shoulder. As with other styles of barbecue, the recipes vary widely and range from slightly sweet to hot and spicy.

I absolutely love seeing diversity being accepted in Texas (my new home since 2020). As a Pacific Islander, it gives me hope for Texas being a state of acceptance and tolerance. You can see it in local Texans and in the food 🥳🥳🤠🤠🥰🥰❤❤
food really is a cultural bridge builder in the world. when a person/people enjoy the food of another culture they are more likely to accept/embrace other aspects of said culture. Texas is no different.

@@achildsheart4658 You can make a trip to Egypt or Asia if you have those privileges, good for you, but you won't be able to eat those specific foods there. You're missing the point. The point is that this is fusion food. It's a love letter from these chefs, a twist on a traditional American staple fused with flavors & cooking style of their cultures. & if that bothers you, then miss out.
