    Definitely going to try this. I can just see a bottle of tinted vinegar on the table. A bar pour spout would fit perfectly in those bottles.

      Me, too! They bloomed early, so I cut back to about 2-inches, and they are coming back up. Super tender and happy. I don't know if they will flower again (?!?) but, here's hoping so because I want so very much to make this lovely vinegar!

    Thanks Erin for this great tutorial. What a great gift idea! I inherited a crop of chives when we moved into our home 45 years ago, they are still going strong. I loved the border idea and now the vinegar idea. Gave new energy to this awesome plant! Loved your comment about mr. much more patient recycling!

    I must make some chive vinegar! It is so pretty with the flowers in it, I would want to sit it in my window while it is steeping. And using the strainer from the spinner is the best tip ever! Why didn't I think of that?😄

    Covet it all, like you do pickles? Pickles, peaches, tomatoes, green beans, or anything you're canning.
    Using chives, flowers or stems, is a great substitute for onions because the flavor of chives is much more delicate. Plus I love the delicate little pink flowers. Virginia, zone 6 northern Ohio

    More simple garden produce recipes like this! I always have big plans to preserve, and never seem to get around to it or have the energy after a season full of glorious gardening. So easy peasy fresh garden preserving would be so appreciated. Thanks Erin!

    Erin, this tastes great, even better if you dice a few garlic scapes up and toss them in the vinegar, along with the chive flowers! I use Rice Wine Vinegar which tastes wonderful infused with chives and garlic scapes. ~Margie

    My chives got out of control, so we put them along the border of the garden to stop the lawn from encroaching. Maybe not our best idea... They are wild! Will have to deadhead. Never thought about that before. LOL. I have a ton of chives, so this looks like an awesome and fun thing to do with the flowers! Thanks, Erin! I love your videos!

    I’ve made fruit flavored vinegars but never savory. Now I need to head out and see if I can find some chives at the nurseries. Thanks for this great idea for another homemade item to go into a cooking themed gift basket. Erin, you’re the best! 🌿

    Where I’m from in Hawaii, everyone does this with small chili peppers. You see them on restaurant tables next to other hot sauces. I will have to try the chive flower infused vinegar. Sounds delicious. I love to grow chives. Thanks for idea.

    Chive blossom vinegar is my favorite of infused vinegars. I also do thyme blossom and lemon balm infused vinegar.

    Definitely need to up my game on vinegar and oils. I have hedges, more like drifts or waves, of garlic chives that bloom late summer. Not as pretty, but I think I’ll make a go of it for the flavor. And , catch the the spring season chives on the next go around.

    What is the shelf life for this once you've finished fermenting and straining?

      It’s vinegar so a LONG time. I’ve used mine 9 months later (and then my stash runs out). Because I’m always paranoid about preserved food and offering advice on it, I’d suggest also looking for a university extension guide on vinegars just to be sure.

      At the risk of being exposed… I’ve had Serrano peppers in a bottle for at least 3 years, and I just keep adding vinegar to it. I would think that this would last longer with no fruit in it, even! 🤷🏻‍♀️
