      Hello ma'am, I am using 2m compound and tried 2 ways to set the chocolate:
      1. By keeping in freezer- then I saw tiny droplets on chocolates
      2. By keeping them in fridge- then there was a greasy/oily layer on chocolates
      Please give some tips

      Dont melt chocolate that has just been taken out from fridge! Keep it outside for some time so that it comes down to room temperature 🍫

      jimmiela bhutia once you remove choco chips from fridge wont it melt ? I tried it last time but ended up sticky when removed out.

      You have to let it set properly in the fridge. Climate temperature varies in each state in India so you have to adjust the setting time accordingly. Use dark chocolate like compound chocolate for better results.

    Hi ma'am plz explain... Once if we melt a chocolate in a double boiler n while making the decorations it again gets harder... Then what should we do...????
    Do we melt it again on the double boiler or in the oven..???.

      Compound chocolate is a bar of chocolate used in baking u can use dairy milk but it will expensive for baking compound chocolates are used.. you can purchase from any baker supply shop or online. Dark.chocolate milk chocolate or white chocolate are three main n common categories.

      Local one u can find easily in ur country but imported brands are GCB or SBC are good brands and these all are from Malaysia.

    Speechless about ur skill.
    I wish to make a b'day cake for my daughter's 13 th b'day...have made fondant covered cakes which r relatively simple cause u get to cover all ur glitches....😉 Wanted to make a chocolate covered cake or jelly covered cake this time ,but am very bad at icing the cake and covering it.
    Could you pls suggest some jelly cake toppings or chocolate topping which we may pour and the cake gets a finished look...waiting for ur suggestions.

      You can always make a chocolate collar around the Cake which hides all the mistakes and u could just grate chocolate on the top , looks and tastes amazing .

    hello mam very nice explanation. I have one question. I have also seen ur video of chocolate garnishes for cake which you made with the use of melted chocolate filled in cones. My question is once the chocolate is melted then after how much time we can fill it in the cones ? and as the melted chocolate cools it starts getting harder then will it get hard inside the cones ? then how to use it ?     Pls make a chocolate rossette cake. That will be helpful for most of us as its difficult to get the rose done out of chocolate and the measurement of ganache, how long to set the ganache to get a perfect rosette. If you could do that. Thankyou

      Airtight containers in s cool place .
      Cling wrap well if not using for a long time.

      Chocolate Rocks are too easy
      Melt chocolate let it cool to room temperature. Add roasted nuts of u choice. Take a spoonful and place on butter paper. Set in fridge.

      Compound chocolate isn’t so healthy . You can use couverture chocolate . Callebaut 811

      I’ve used compound chocolate which is already tempered
      If ur using couverture /pure chocolate u def need to temper for sure at ab 28 degrees

      Pls see my videos n my instructions carefully
      For setting we only jee
      For a few minutes n the. We store in the fridge for a few hours before using
      Chocolates / Bonbons take about 5/8 minutes

      Maybe. U r keeping them for too long in the freezer . U have to take them out at the correct time and I hope u are using room temperature chocolate. If u r using hot choclate u will have problems

    Great video! I am trying to make a magic chocolate ball but I am having problems with my chocolate, when I put it in the freezer it keeps sticking to my tillable bauble. Do you have any tips on how to get the chocolate to come off in one round ball? Many thanks.

      It’s all about temperature. First wipe ur mould very well
      Melt the chocolate n make sure it’s at room temperature
      After coating with the chocolate freeze until the moulds gets frosted. It should come out easily.

      Its better to not melt too much at one go . Make as many decorations as possible .

    Excuse me mam.....i use mello choco bar....and its not melting properly through double boiling......i thought that i wanna use glass bowls for double boil and tried in that way..... But my birthday just broke into give pieces..... But still my chocolate was not melted..... It became like some dry clay..... Please reply...     I'm suspicious that my compound chocolate is not made of cocoa butter because it melts easily in room temperature or in my hand. I tried to temper it, but still easily melt. What should I do or add to make the chocolate hard just like the normal chocolate bar😄 TIA mam😊

      Compound chocolate has no cocoa butter And doesn’t require tempering as it’s pre tempered.
      You can add cocoa butter
      I think In 1/2 kg you can add 10gms or so .
      But nowadays you can buy couverture chocolate at good prices
      Belcolade is a good one

      You can always add warm fresh cream or whipping cream inorder to increase the quantity of chocolate, adding warm whipping or fresh cream will also give it a smooth texture and better flavour🍫❤️

    My chocolate was always gone hard because I heat it too much and steam gone insidé chocolate and then chocolate get hard

    Ma'am sometimes the chocolate just doesn't melt, it siezes. My dark compound developed a whitish layer in the fridge. Could that be the reason?

    Hi madam I m sandeep for London working as a pastry chef from 12 years. u d'nt tell your VIEWERS what is the tempreature for melt chocolate .The melting point of chocolate is between 86 degrees F and 90 DEGREES f.
