Highway mpg could be easily solved woth everything you mentioned PLUS shifting at 2.5k rpm or below, little bit taller tires on the rear if rwd, and if possible longer gear in the diff...if 2015-2017 mustangs with a 3.7 v6 can chug along under 2k rpms at 75mph getting 27-32mpg on the highway being around the same weight as a g37 then a g37 rwd model which pretty much performs and feels the same engine wise should be able to do the same if not close...change the diff gears, if not then just get a little taller tires, find the tremec gear ratio calculator on google and input your gear ratios along with tire size and compare it to see how much rpms will drop on the highway in 6th gear with taller tires or a longer rear diff ratio...in my 2011 3.7 stang if i shift gears around 2k rpm then i get 22-24mpg city, and anywhere from 27-32 on the highway...stock 3.31 gears, 6 speed manual with 235 50 18 tires...should get a little better with taller 235 55 18 tires or even 245 55 18 to reduce the rpm a little at cruising speeds

Also make sure your tire pressure is good, alignment proper and if possible find non ethanol gas since ethanol gas burns faster
