You should do this fight again but with Soma's Viper theme. It fits more here because that man is such a viper especially his knives being poisoned like a viper tooth.

I don't know that timing for ex action yet too so I don't have any tips on that either. I just pressed the triangle button a little later than I pressed it as soon as I grabbed him.
