    These look amazing. I grew up in Chicago and my dad would bring home charsiu bao and sticky rice wrapped in lotus leaf every time he had a work call anywhere near China town. Now, many years later with him passed and no longer living in an area with access to such deliciousness I’m excited to be able to try this at home! Thank you for your diligent testing! It’s always worth the wait for your recipes. ❤️

    Siu bao is called siopao in the Philippines. I havent eaten siopao for a long time. So i'm excited to try this! Thank you!

    This video was SO worth the wait!! I can’t wait to try the filling - I‘ve already tried the dough recipe from the last bao recipe and it was so freaking good...the filling too but the dough just blew me away. My Asian grocery store has vegan pork belly (the „fatty“ parts are made from agar agar), maybe that would work in this bao too 🤔

    I made these this weekend! Making the washed seitan was almost therapeutic. My pleating definitely needs some work 😅 but holy shit these were delicious! I frozen the left over seitan and might make them again next weekend 😁

    Those look delicious! I was one of those kids who cut parchment paper into even squares when I was little 😁 and my mom used to flip them baos upside down before putting them on the paper.

      The ones from Zen Gardens have like a stiffer, sweeter dough but the filling was what I was after! The balance for the sauce they have is so good and is what I tried to emulate here :D

    The trick to the bao is a 5 minute resting time? Everytime I ask my mom, she's just, "Until it's done"

      Yep! I def made them ahead of time, I let it rest for about 8 hrs overnight before cutting em up for these buns

    Funny we call those types of buns bapao (or perhaps they are a bit different, but basically they are steamed and filled buns) and thanks for the seitan recipe!!!! For the first time ever I liked seitan!!!!

    This would be good with vegan Chinese red pork recipe I have ;) made with vital wheat gluten though and a load of marinating before hand

      Unfortunately, Seitan is pure gluten.😅 You can use pea protein or soy cules instead. 😉

    Thank you! Looks so delicious! Have you tried freezing them (before steaming, like dumplings) for later? Wondering if that would work well. Would want to make a big batch but I live alone so I’d like to save some.

      I think the best time to freeze them is after you steam them, I’m not confident the yeast will survive the freezer

    Looks great. I would have been the one to cut up those pieces of paper, but my mom never made these for some reason. Probably just too labor intensive for her to bother with, I guess, or maybe just a regional thing where she didn't grow up having/making these in her village.

      Hmm I’m not too sure. It has a distinct like, bitter and fermented flavour. You could try subbing unseasoned mirin (so not the sweet cooking one)? Or maybe like 1 tbsp white vinegar and 1 tbsp broth?
