I can’t wait to try the filling - I‘ve already tried the dough recipe from the last bao recipe and it was so freaking good...the filling too but the dough just blew me away. My Asian grocery store has vegan pork belly (the „fatty“ parts are made from agar agar), maybe that would work in this bao too 🤔

Those look delicious! I was one of those kids who cut parchment paper into even squares when I was little 😁 and my mom used to flip them baos upside down before putting them on the paper.
The ones from Zen Gardens have like a stiffer, sweeter dough but the filling was what I was after! The balance for the sauce they have is so good and is what I tried to emulate here :D

Unfortunately, Seitan is pure gluten.😅 You can use pea protein or soy cules instead. 😉

I think the best time to freeze them is after you steam them, I’m not confident the yeast will survive the freezer
