I just came across your channel. You are very humble. 2 weeks back i made vada and one of the vada just exploded due to which oil splashed on my hand and its very badly burnt. I don't think i will ever make vada again. But wanted to know what could be the reason for this explosion. One of my friend experienced the same couple of months back.
While rubbing the paste on the plate several times you can see fluppyness in means it contains air in it there is the chance of explosion so according to chef's suggestion it should be cooked in low to medium flame and try tilt the after 3,4 seconds to avoid explosion.

Each tip is useful...one point I would like to share I use face loose dough problem and I came with solution by adding it same urad dal flour grinded in mixi at home and leave aside ....so I could make vadas as shown by you very easily .....with same crispy texture. @@Alwaysbeniceok I was botn in Madras 71 years back. I have been cooking for 50 years. For urad dal, 2 hours in summer and may be 4 hours in winter will suffice. I am a chef and retired in US having introduced all south Indian batters to Southern states and now in California.So I know Idli, Vadai batters well.
Thanks for the recipe chef, followed all your tips, loved the way how vada came out soft and especially not oily at all. For the second serving, did a small change to the recipe, added a tablespoon of rice flour to the batter as my people like it crispy. Will surely recommend adding rice flour in small quantity.
No, rice flour should be added if you are having just vada, not in sambar vada. Sambar vada should be very soft so that it can be soaked in vada and taken. There's a difference between the two. So rice flour is not recommended in sambar vada.
