We add little rice flour to the urad dal batter to get crispy vadas which stay crispy even when cold. But that is optional.
When making sambar if we are using fast cooking vegetables like drumsticks or pumpkin etc, we cook them separately with little salt and add to the mashed dal tomato mix. Some people add tamarind pulp and sambar powder already to the vegetables while cooking them separately. We dont pressure cook these vegetables.
