    I used to work at chipotle. This is right, except for the veggies. In the recipe books there, it tells us to soak the onions, cilantro, salt, and jalapenos (or "macerate" the veggies) in the lime juice for a few minutes before adding to the avocados.

      I worked on prep at chipotle in 2021 and I second this, my management told us the cilantro had to go in the lime juice first because it was the only vegetable that couldn’t be sanitized by boiling or soaking in a cleaning solution and so the goal was to get the lime juice to kill any bacteria on the cilantro I don’t know if that’s company policy or just my management that gave that reasoning.

      2 lbs boneless, skinless chicken thighs (or breasts, though thighs tend to be juicier)
      3-4 chipotle peppers in adobo sauce (you can adjust based on your spice preference)
      2 tablespoons adobo sauce (from the can of chipotle peppers)
      2 tablespoons ancho chili powder
      2 garlic cloves
      2 teaspoons cumin
      2 teaspoons dried oregano
      1/4 cup vegetable oil or canola oil
      1 tablespoon lime juice
      1 teaspoon salt
      Black pepper, to taste
      Instructions:
      Marinate:
      Combine the chipotle peppers, adobo sauce, ancho chili powder, garlic, cumin, dried oregano, oil, lime juice, salt, and black pepper in a blender or food processor. Blend until you have a smooth marinade.
      Place the chicken in a bowl or zip-top bag. Pour the marinade over the chicken, ensuring all pieces are well-coated. Seal the bag or cover the bowl and refrigerate for at least an hour. For best results, marinate overnight.
      Cooking:
      Preheat your grill or grill pan over medium-high heat. If using a grill, oil the grates to prevent sticking.
      Remove the chicken from the marinade, letting excess drip off. Grill the chicken for about 4-6 minutes on each side or until fully cooked through. The exact time will depend on the thickness of the chicken.
      If you don't have a grill, you can also pan-sear the chicken in a hot skillet with a bit of oil, flipping it midway through to ensure even cooking.
      Serve:
      Once cooked, let the chicken rest for a few minutes, then chop it into small, bite-sized pieces.
      Serve with your favorite burrito ingredients or as a topping for a Chipotle-style salad or bowl.

    Worked at chipotle. Lime juice is actually a lemon-lime juice, soak all veggies in the lime juice first, mash the avocados and salt BEFORE adding veggies

    It is actually a combination of lime and lemon juice! They actually have a gallon of citrus juice which is lime and lemon juice premade!

    Guac and salsa hack: make a well with watever you are working with avocado or tomato and out your diced onions in the well. Add your acid ( vinegar, lime juice etc) let it selit for a minute before you mix. It will cut the harshness of the onion and make the dish more cohesive

    let your red onion sit in the lemon juice for a couple min. It takes out some of that raw onion bite and allows the lime to really shine in the Guac.

      @@roesmary764 Those are pretty huge avocados so I wasn't mad at the larger amounts, but seeing as ALL the ingredients looked like more than the recipe calls for except the lime I would probably increase the lime also. lol

    Chipotle Guacamole recipe:
    1- avocado (2)
    2- lime juice (1 tsp)
    3- chopped cilantro (2 tbsp)
    4- diced red onions (1/4 cup)
    5- jalapeño (half; keep seeds)
    6- salt (1/4 tsp)
    7- add diced tomatoes as you like

      Guac 🥑 doesn’t have to be precise. As we saw, her measurements were off for almost all of her ingredients. It’s gonna change anyway depending on the type, source, and ripeness of the avocados. Make it so that you enjoy it. (I like a bit of red in mine so I add a bit of fine chopped red peppers. It looks pretty :))

      It’s an uncooked recipe. No ingredients have to be precise. You put in what you want into it to taste. For instance, you can add onions and tomatoes to change up this guacamole if you want.

    That’s not chipotle guacamole that just guacamole that most people do. Try substituting the red onions with green stem onions, it gives the best flavor.

    So you took the "tweeted out, exact measurements"... then made it your own way with very different measurements...?! 🤔 The most accurate part was probably the 2 avocados!! 🥑🥑🤷🏻‍♀️🤪😂 To be fair though, with the variation of taste in the avocados, cilantro, jalapeño, onions and lime juice... odds are very good it will taste slightly different in every batch even if you actually do use the same, exact measurements!! 😃

    When trying to get my beloved Mom's recipes, she'd say "about this much" & showed me her eyeballed amounts in her hand or a bowl 😂 I then measured it whenever possible, but Mom's love always made things taste better, even if recipe followed directly 🥰
    Many great Chefs measure like this, or just to taste 😋

      Honestly how good the chips are is HUGELY dependent on who is making them that day. Chips are always made fresh in the mornings (and sometimes again in afternoon if really busy) & they’re thrown out at the end of the day. If you’re getting stale chips it’s bc the person who made them was putting too much lime juice lol.

    They didn't even use lime juice when I worked there almost a decade ago. They used Odwala brand citrus blend which was lemon juice, lime juice and sugar and water.

    I love that they don't use white onions. Because white onions and guacamole is just trash. I love that they don't put tomatoes in it to water it down. But the one thing they need to do is rinse the onions in water before adding to the mixture. I find their onions overpower and leave an aftertaste for hours

    Actually had no idea there was jalapeño in their guacamole, never noticed spice. Crazy to see it look exactly like Chipotle guac.

    Weird I know but throw some amino acids in there for an elevation of flavor. It will not make it closer to chipotle guacamole, IMO better. 😊
