I am a proud Texas Czech. Only 2nd Generation born in US... and often wanting to know if Czech Republic has a return policy for decedents... Lol! Use my grandmothers Kolache Recipe to this day. I was always told by my polish grandmother NEVER use metal when doing dough so I use her old crock bowl and a wooden spoon to make them. I am so excited to find your channel! Already shared it with my two grown boys who are proud Czechs also! My singular mission has been to educate Texas and others that a kolache has NO MEAT. I moved to Austin, got so excited to see a place with kolaches and when I ordered it, they asked if I wanted sausage or ham???? I was sooo confused. In my little Czech community... that was a pig in the blanket or a klobasnik. When I say I am making kolaches, I have had people ask if I can make them some. I say sure... what flavor. They say sausage. I look them directly in the face and seriously say... "Sure... do you want me to put the sausage on the top of the cherry, pineapple or cream cheese kolache? And do you still want the posypka or for me to leave it off. " They just stare back at me with a blank stare. Never ask a Czech girl to change her ways! LOL! Thank you again... I am making cheese strudel rolls, from my Czech Aunt's recipe this weekend. I had to go to her house and make it with her before she would give me her recipe.

My father's mother was Czech but I didn't grow up around that side of my family, and my mom always told me that she made the best kolaches ever. I wish I could try her recipe but no one has it and she passed on years and years ago.

I am half Czech American and this is a good explanation of how to make it. I have even made kolache that are more like French Brioche with Hazelnut Nutella and also with orange marmalade and a pecan filling and have even made cranberry kolache for Thanksgiving.

I am not Czech. I am Lakota Sioux and French. However, I do live in Nebraska, and you’re correct ! Nebraska Czechs LOVE the Kolaches! So do I ! I have made my own recently, but I like your recipe better. I also made your recipe for bread dumplings to go with a roasted duck and saurkraut dinner. I grew up on a lot of different ethnic foods as south Omaha has all different ethnicities represented back then and I’ve grown to love Czech, Polish, Bohemian, and German foods. I just want to say that I love your videos! I am Czech but was raised in a very American household. My mom, however, was raised in a traditional Czech home with all of the ethnic foods. Unfortunately, she doesn't know how to make any of them. Your videos make my want of ethnic foods a possibility! I am going to try to make Koláče tomorrow!

My mom made these when I was growing up. My grandmother was Bohemian. I was in a doughnut shop today and they had kolaches so I ordered one. They gave me a pig in a blanket! I had to look it up on UA-cam to make sure I wasn't crazy. My younger daughter and I have been trying different recipes this summer so it will be fun to try some authentic Czech recipes.

Oh my goodness... pig in a blanket. :) Well there are authentic Czech kolache and then there seems to be an Americanized version of kolache that comes in all shapes and sizes and filling or toppings. I try to keep my true Czech culture and recipes alive by keeping it as authentic as possible. Hope you enjoy this recipe and that it turns out great for you! :)

I made farmers cheese from your recipe, and made half my kolaches with cream cheese, and half with the farmers cheese.. I really liked the farmers cheese! One of my grandmothers is from what is now the czech republic, and I have several czech aunts on the other side of my family.
Just finished watching video! Brought back wonderful memories of being around Czech and German heritage growing up in central Nebraska. I will be trying my hand at prune Kolache, with a twist, my Grandma Chizek use to put a light glaze icing and then sprinkle coconut shavings over the top of her baked prune kolache...Mmmm ;)...Thanks for making an excellent video!
I have to try this one! (Usually we make it with butter, cream cheese, flour and filling.) I love yeasted pastries...but have a bit of a phobia to use it myself. But I trust your recipes, they've never disappointed. I'm gonna give it a go.

Texan kolaches are authentic, but they are authentic TEXAN kolaches. The modern Czech recipes have influences from French baking in the early 20th century, ours come from rural recipes made for the Texan market. Food evolves, and it's okay!
This is awesome. The thing about authentic Texas Czech is that the people were mostly poor and farmers. They used what they had in the fields for ingredients. And then later on after the 50's Texans were adding things like corn syrup and other ingredients that they just don't use in Europe. What I like about this is that brings it back to what a Kolache is supposed to be. It's the REAL DEAL.

My grandmother grew in a Czechoslovakian community in Cyclone Texas long in the 1900s. I noticed that they pronounce kolache like it sounds Italian like ko-lach-i. My mother always pronounced it like she does here though. Funny thing is, I myself have never had a kolache. I just heard my Mom talk about them, but she never made any. Sausage and cheese sounds good. I need to make some myself.

You could have saved me 15 years of trial and error trying to duplicate my grandma's recipe if youtube would have existed back then. She never would write it down. What I eventually created is almost exactly like this, so I feel validated. This knowledge is priceless. My favorites are prune and poppyseed kolaches.

Mary Ann, I have always had the advantage of a poppy seed mill that is basically a burr grinder. I highly recommend the poppy seed mill that czechcookbook offers on the website- czechcookbookshop.com/collections/kitchen-tools/products/full-stainless-steel-classical-kitchen-tool-manual-poppy-mill-grain-seeds-mill-hand-operated-nut-grinder-and-spice-grinder If you adjust the mill to make a fine paste, you can get the full flavor in your poppy seed filling. Good poppy seed filling has a fine texture with sweetness from the sugar and creaminess from the milk. If you taste it for the first time you will taste a trace hint of "earthy" flavor that some people might describe as umami. It can be an acquired taste for some Americans but for those of us who are Czech it is extremely tasty and nostalgic. Zkus to!

Hi, I recently discovered your channel and I purchased two copies of your cookbook. My Czech ancestors immigrated to Texas in the late 19th century and kolaches are very popular here. I am so happy that you are making them in their traditional form. Yours are excellent and so much better than the Americanized variant which is more like a fruit filled donut. I do have a couple of questions for you about the size of the kolaches. I have a scale so I can weigh the dough balls and size them evenly. About how many grams should the balls be? I made some between 75 and 100 grams and 100 grams seemed a bit large. Also, how wide is the bottom of your glass? I use a meat pounder that measures 3 inches in diameter to press the kolaches. Thank you Ivana! :) I would recommend you put the whole risen dough on scale and figure out how big you want them to be and divide the dough accordingly so you know how big each ball of dough should be. This way you can put each on scale and have them exactly the same. I didn't put them on scale so I don't know how much. I am currently in the Czech Republic since December and all my furniture and kitchen things are in storage so I am not able to measure the glass. I think it is about 3 inches.

I’m Czech and I’ve recently moved to the US. I just took the first batch out of the oven and they’re great! I’ve never baked before, but an acquaintance approached me asking for kolaches since they heard I’m czech 😅. So I said sure and now I’m making 54 kolaches in one day as someone who’s never baked anything other than a banana bread before 😂. So thank you so much! the instructions are clear and the recipe is easy enough even for a beginner. I have a question too: if making multiple batches (I’m making triple of what the recipe says rn), is it ok to make a one huge dough or should one just do it in separate batches? (I did separate now just because it’s my first time baking it but it’s be nice to be able to just do one big dough). Thank you!

I'm finally making the kolace tomorrow. You said if I use quick rise yeast I can skip the proofing and not warm the milk. I'm new to baking -what is "proofing.?" Also, what is the best way to reheat frozen kolace? Thank you!
Proofing is when yeast is in warm milk and sugar and is sitting for 10 minutes to active. It will bubble nicely and be alive. Frozen Kolace just let sit in room temperature to thaw. Doesn’t take long.

Carrie Lum if you have kitchen aid you can put it in and have it mixing for about 5 minutes. By hand probably similar time. You are looking for a smooth dough.

Hi Christina, its great to get some Czech recipes, as my Mom was born in Czech. These are my oroblems: you solved the "tvaroh" as ut has nothing to do with cottage cgeese. Hwr: Could you advise me about Povidla? The jam made of plums is not close to what povidla should taste. Additionally, can you tell me what is the proportion of fresh yeast (Czech use fresh, I believe 25 g 'kostka) and I bought instant yest and active yeast ( active is about 1/4 of fresh yeast, and instant is 1/2) I am still trying to get teh proper dough for yeast made kokace. If you can advise, Id be appreciative.Jan
Hi Jan, yes povidla do taste different. Some plum butter actually taste similar. I make my own povidla. Still working on perfecting the recipe to share. Fresh Czech yeast is 42 grams which equals 3 tsp active dry yeast. Wishing you success! 😊

Your recipe looks delicious, and I can't wait to try it. One question for you...can cream cheese be substituted for the farmers cheese? What do you recommend for a suitable substitute? I was thinking a combination of cream cheese, mixed with some ricotta cheese. Please let me know. Thanks for posting your videos! I can't wait to watch them all!
+Lisa Strahan Aww, thank you! Glad you enjoyed the video. :) Some people do make it with cream cheese. I have not tried it yet since I make my own farmers cheese. Ricotta would probably work as well, but it would have to be without salt. Some stores like Whole foods sometimes sell farmer's cheese, but again would have to be not salty. Your process looks pretty close to what my Czech grandmother made. She topped them with cooked and puréed dried apricots and an apricot-prune mixture as well as poppy seed and farmer's cheese. Her crumbled topping was made with brown sugar, flour, and butter. My mother stood by my grandmother one day when she visited and measured the pinches and handfuls as they were added to the mixing bowl. I have that recipe and have baked kolacky (as my grandmother termed them) since I was in my teens, using the apricot and prune-apricot toppings. I have never known just how to make the poppy seed and farmer's cheese toppings-and now I do. Thank you!

+Sherie Santa I think Ricotta would be better than cottage cheese. If you want the real deal, try making it with farmer's cheese, but should be without salt. I have made my own recently, but I like your recipe better. I also made your recipe for bread dumplings to go with a roasted duck and saurkraut dinner.
I grew up on a lot of different ethnic foods as south Omaha has all different ethnicities represented back then and I’ve grown to love Czech, Polish, Bohemian, and German foods. Italian too, but mostly Czech. Oh and Lithuanian !!! Especially the bakery lol.

Oh my goodness - thank you so much for this recipe. I made a batch yesterday and had to make another batch today! They are so good!! I made the farmers cheese and the poppyseed filling too. My kids aren't huge fans of the poppyseed filling, but it works out, because I like it so much I don't want to share. I love your recipes and love watching your videos!!

I just want to say that I love your videos! I am Czech but was raised in a very American household. My mom, however, was raised in a traditional Czech home with all of the ethnic foods. Unfortunately, she doesn't know how to make any of them. Your videos make my want of ethnic foods a possibility! I am going to try to make Koláče tomorrow!

My mom made these when I was growing up. My grandmother was Bohemian. I was in a doughnut shop today and they had kolaches so I ordered one. They gave me a pig in a blanket! I had to look it up on UA-cam to make sure I wasn't crazy. My younger daughter and I have been trying different recipes this summer so it will be fun to try some authentic Czech recipes.

Oh my goodness... pig in a blanket. :) Well there are authentic Czech kolache and then there seems to be an Americanized version of kolache that comes in all shapes and sizes and filling or toppings. I try to keep my true Czech culture and recipes alive by keeping it as authentic as possible. Hope you enjoy this recipe and that it turns out great for you! :)

I made farmers cheese from your recipe, and made half my kolaches with cream cheese, and half with the farmers cheese.. I really liked the farmers cheese! One of my grandmothers is from what is now the czech republic, and I have several czech aunts on the other side of my family.

Texan kolaches are authentic, but they are authentic TEXAN kolaches. The modern Czech recipes have influences from French baking in the early 20th century, ours come from rural recipes made for the Texan market. Food evolves, and it's okay!
I agree this is soooo close to my families recipe. Method different but too each there own!! Love it!!
The bakery near our house made them round. We lived in Houston, Texas.
This is awesome. The thing about authentic Texas Czech is that the people were mostly poor and farmers. They used what they had in the fields for ingredients. And then later on after the 50's Texans were adding things like corn syrup and other ingredients that they just don't use in Europe. What I like about this is that brings it back to what a Kolache is supposed to be. It's the REAL DEAL.
My mom use to make poppy seed kalache. Man o man was that so good.
This addresses the main problem I have with donut shop kolaches--the fluffy breadiness. This looks way more authentic. I think I could make these!
You are right! The ones sold in USA have almost nothing to do with the traditional kolace unfortunately. :( You can definitely do these. :)

My grandmother grew in a Czechoslovakian community in Cyclone Texas long in the 1900s. I noticed that they pronounce kolache like it sounds Italian like ko-lach-i. My mother always pronounced it like she does here though. Funny thing is, I myself have never had a kolache. I just heard my Mom talk about them, but she never made any. Sausage and cheese sounds good. I need to make some myself.

You could have saved me 15 years of trial and error trying to duplicate my grandma's recipe if youtube would have existed back then. She never would write it down. What I eventually created is almost exactly like this, so I feel validated. This knowledge is priceless. My favorites are prune and poppyseed kolaches.

I have always had the advantage of a poppy seed mill that is basically a burr grinder.
I highly recommend the poppy seed mill that czechcookbook offers on the website-

If you adjust the mill to make a fine paste, you can get the full flavor in your poppy seed filling.
Good poppy seed filling has a fine texture with sweetness from the sugar and creaminess from the milk. If you taste it for the first time you will taste a trace hint of "earthy" flavor that some people might describe as umami. It can be an acquired taste for some Americans but for those of us who are Czech it is extremely tasty and nostalgic.

Hi, I recently discovered your channel and I purchased two copies of your cookbook. My Czech ancestors immigrated to Texas in the late 19th century and kolaches are very popular here. I am so happy that you are making them in their traditional form. Yours are excellent and so much better than the Americanized variant which is more like a fruit filled donut. I do have a couple of questions for you about the size of the kolaches. I have a scale so I can weigh the dough balls and size them evenly. About how many grams should the balls be? I made some between 75 and 100 grams and 100 grams seemed a bit large. Also, how wide is the bottom of your glass? I use a meat pounder that measures 3 inches in diameter to press the kolaches. Thank you in advance!
Thank you Ivana! :) I would recommend you put the whole risen dough on scale and figure out how big you want them to be and divide the dough accordingly so you know how big each ball of dough should be. This way you can put each on scale and have them exactly the same. I didn't put them on scale so I don't know how much. I am currently in the Czech Republic since December and all my furniture and kitchen things are in storage so I am not able to measure the glass. I think it is about 3 inches.

I’m Czech and I’ve recently moved to the US. I just took the first batch out of the oven and they’re great! I’ve never baked before, but an acquaintance approached me asking for kolaches since they heard I’m czech 😅. So I said sure and now I’m making 54 kolaches in one day as someone who’s never baked anything other than a banana bread before 😂. So thank you so much! the instructions are clear and the recipe is easy enough even for a beginner. I have a question too: if making multiple batches (I’m making triple of what the recipe says rn), is it ok to make a one huge dough or should one just do it in separate batches? (I did separate now just because it’s my first time baking it but it’s be nice to be able to just do one big dough). Thank you!

Saying it this way is correct for smaller ones. Large ones are kolače, small ones koláčky. 😊

I'm finally making the kolace tomorrow. You said if I use quick rise yeast I can skip the proofing and not warm the milk. I'm new to baking -what is "proofing.?" Also, what is the best way to reheat frozen kolace? Thank you!
Proofing is when yeast is in warm milk and sugar and is sitting for 10 minutes to active. It will bubble nicely and be alive. Frozen Kolace just let sit in room temperature to thaw. Doesn’t take long.

Carrie Lum if you have kitchen aid you can put it in and have it mixing for about 5 minutes. By hand probably similar time. You are looking for a smooth dough.

I have not tried it with fresh fruit. I know some people do peaches or plums. Farmers cheese should be good for a week in the fridge. :)

These are my oroblems: you solved the "tvaroh" as ut has nothing to do with cottage cgeese.
Hwr: Could you advise me about Povidla? The jam made of plums is not close to what povidla should taste.
Additionally, can you tell me what is the proportion of fresh yeast (Czech use fresh, I believe 25 g 'kostka)
and I bought instant yest and active yeast ( active is about 1/4 of fresh yeast, and instant is 1/2)
I am still trying to get teh proper dough for yeast made kokace.

Hi Jan, yes povidla do taste different. Some plum butter actually taste similar. I make my own povidla. Still working on perfecting the recipe to share. Fresh Czech yeast is 42 grams which equals 3 tsp active dry yeast. Wishing you success! 😊

Your recipe looks delicious, and I can't wait to try it. One question for you...can cream cheese be substituted for the farmers cheese? What do you recommend for a suitable substitute? +Lisa Strahan Aww, thank you! Glad you enjoyed the video. :) Some people do make it with cream cheese. I have not tried it yet since I make my own farmers cheese. Ricotta would probably work as well, but it would have to be without salt. Some stores like Whole foods sometimes sell farmer's cheese, but again would have to be not salty. Your process looks pretty close to what my Czech grandmother made. She topped them with cooked and puréed dried apricots and an apricot-prune mixture as well as poppy seed and farmer's cheese. Her crumbled topping was made with brown sugar, flour, and butter. My mother stood by my grandmother one day when she visited and measured the pinches and handfuls as they were added to the mixing bowl. I have that recipe and have baked kolacky (as my grandmother termed them) since I was in my teens, using the apricot and prune-apricot toppings. I have never known just how to make the poppy seed and farmer's cheese toppings-and now I do. Thank you!

+Sherie Santa I think Ricotta would be better than cottage cheese. If you want the real deal, try making it with farmer's cheese, but should be without salt. Yes, I can't wait to visit Texas and try some of those. In Czech we never make them filled with anything else but sweet filling.
